MAMA'S TEXAS-STYLE PEACH COBBLER
This is very traditional southern comfort food always cooked in a big bowl. My grandmother passed down her 'cobbler bowl' to me that she got from her grandmother.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix self-rising flour and sugar in a bowl. Stir milk into the flour mixture.
- Pour melted butter in an oven-safe bowl. Pour flour mixture over melted butter. Layer peaches in heavy syrup atop flour mixture. Do not stir!
- Bake in preheated oven until peaches are bubbly and crust is lightly browned, 50 to 60 minutes.

TEXAN PEACH COBBLER
Classic, delicious, comforting dessert straight from the Lone Star State. Who can resist a sweet biscuit-like batter rising up through juicy, summer-ripe peaches and encrusted with the lightest coating of carmelized sugar? I know I can't!! Goes great with any cook-out!

- Preheat oven to 350 degrees.
- Combine first 5 ingredients in a bowl; toss and set aside.
- Place butter in 8-inch square baking dish.
- Place in oven for 5 minutes or until butter is completely melted.
- Combine flour and next 4 ingredients in a medium bowl.
- Combine milk and vanilla.
- Add milk mixture to the flour mixture and stir until just combined.
- Spoon batter over butter, spreading evenly (DO NOT STIR!).
- Spoon peach mixture over batter, gently pressing peaches into the batter.
- Bake at 350 for 40 minutes.
- Sprinkle top with turbinado sugar and bake for an additional 10 minutes or until top is golden.

- Preheat over to 350.
- To prepare filling, combine peaches, sugar, lemon juice & vanilla. Set aside.

THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. - For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.

- Pour self-rising flour into large mixing bowl. Add granulated sugar and mix thoroughly. Mix in milk until batter is thoroughly wet yet lumpy. DO NOT OVERMIX!
- Preheat oven to 275 degrees F.
- Cut butter into 4 parts and place in a 9-by-13-inch baking pan. Place in oven until butter is completely melted. Remove pan from oven and pour the batter evenly around the pan. Add peaches to the pan evenly, pouring the peach syrup from one can into the batter. Add a fine dusting of cinnamon to the top of the batter and place the pan in the oven. Bake 45 minutes. Rotate pan and continue to bake 45 minutes more. Remove from oven and spread turbinado across the top of the cobbler. Bake until cobbler top is light golden brown, an additional 10 to 15 minutes. - In a mixing bowl, combine flour, sugar, and baking powder. Add milk and stir until it's lumpy. In a small saucepan, melt margarine and pour into a 9 inch baking pan. Then pour the flour-sugar-milk mixture over the margarine. DO NOT MIX. Cover with the canned peaches including juice. DO NOT MIX. I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.
