THAI-STYLE PORK NOODLE BOWL

I love Thai curry, and I love noodle bowls, and this is a blend of the two. It may not be authentic but it hits the spot.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook noodles in the boiling water, stirring occasionally, until tender yet firm to the bite, about 2 minutes. Drain and set aside.
  • Meanwhile, combine soy sauce, honey, and fish sauce in a small bowl until blended; set aside.
  • Heat a large nonstick skillet over medium heat for 1 to 2 minutes. Pour in vegetable oil. Add curry paste, garlic, and ginger paste; cook until fragrant, about 1 minute. Add coconut milk in intervals, stirring as you pour it in to keep the sauce from separating.
  • Add pork strips, carrots, and snap peas and cook until pork is cooked through, about 5 minutes. Add drained noodles to the skillet, then add soy sauce mixture. Simmer until sauce has thickened, 4 to 5 minutes.
  • Divide pork and noodle mixture among serving bowls and top with cilantro, lime zest, and juice. Serve immediately.

Steps:

  • Place the pork in the freezer about 10 minutes to make it easier to slice. Soak the noodles in very hot water until just tender, about 10 minutes; drain. Snip the noodles with scissors into shorter lengths. Cut the frozen pork crosswise into 1/4-inch-wide strips.
  • Puree the cilantro, lime zest and juice, ginger, garlic, jalapenos, shallots, fish sauce, brown sugar and 1 tablespoon water in a food processor until smooth, scraping down the processor as needed.
  • Heat 3 tablespoons peanut oil in a large skillet over high heat. Add half the cilantro mixture and stir-fry 1 minute. Add the pork and stir-fry until no longer pink, 2 to 3 minutes. Transfer the pork with a slotted spoon to a plate. Add the remaining 1 tablespoon peanut oil to the skillet; add the green beans and stir-fry until tender, 4 to 5 minutes. Add the noodles, pork and 2 tablespoons of the remaining cilantro mixture. Cook, tossing with tongs, until heated through, about 2 minutes. Stir in the remaining cilantro mixture to taste.

1 pound thin boneless pork chops, fat trimmed
8 ounces wide Thai rice noodles
1 cup fresh cilantro (leaves and stems)
Finely grated zest and juice of 1 lime
2 slices peeled ginger
2 cloves garlic, smashed
3 red jalapeno peppers, seeded and roughly chopped
2 shallots, roughly chopped
3 tablespoons fish sauce
2 tablespoons packed light brown sugar
4 tablespoons peanut oil
1/4 pound green beans, split lengthwise and cut into pieces

  • Heat the oil in a large saucepan over medium-high heat. Add the scallion whites, garlic, and ginger and cook, stirring, until fragrant, about 30 seconds. Add the pork and cook, breaking it up with a spoon, until browned and cooked through, 6 to 8 minutes. Add the mushrooms and 1/2 teaspoon salt and cook, stirring frequently, until tender, 2 to 3 minutes more.
  • Add the broth, fish sauce, and 2 cups water to the saucepan and bring to a boil. Add the wonton wrappers, reduce heat, and simmer until tender, 1 to 2 minutes. Stir in the lime juice. Serve with the scallion greens, chili peppers, cilantro, and lime wedges.

PORK NOODLE SOUP WITH GINGER AND TOASTED GARLIC

This soup, based mostly on pantry staples, can be made with a variety of proteins, noodles and greens depending on what you have on hand. Snow pea leaves are exceptional here, which can be found in many Asian grocers year-round, but spinach, Swiss chard or other dark leafy green would work well. Don't skip the raw onion, the soup's finished complexity depends on it.

Pork Noodle Soup With Ginger and Toasted Garlic image

Steps:

  • Heat vegetable oil in a large, heavy-bottomed pot over medium.
  • Add garlic and cook, stirring occasionally, until the slices become nicely toasted and golden brown, 2 or 3 minutes. Using a slotted spoon, remove garlic and set aside.
  • Add pork and red-pepper flakes to the pot, and season with salt and pepper. Cook, using a wooden spoon or spatula to break up large pieces, until the pork is well browned and in small bite-size pieces, 5 to 8 minutes.
  • Add chicken broth, soy sauce and 4 cups water. Bring to a simmer and cook for about 5 to 8 minutes or so, until the pork is very tender and the broth tastes impossibly good. (Give it a taste and season with salt, pepper, red-pepper flakes and soy sauce, if you want.) Add pea leaves, half of the onion slices, and all of the ginger. Stir to wilt the leaves.
  • To serve, ladle soup over noodles and top with remaining onion, cilantro and toasted garlic.

  • Start by making the pork broth. Combine all of the broth ingredients listed above and bring to a boil in a large pot. Once everything has boiled for ~30 minutes, turn the heat down to medium and let simmer for at least 2 hours. While the broth is simmering, you can prepare the other ingredients.
  • To make the BBQ pork, combine 1/2 package of the roast red pork powder with 1/4 cup water and mix until dissolved. Marinate 1/2 pound of the pork in the mixture for at least 1 hour. Then cook at 400 degrees for at least 20 minutes or until done.
  • To make the ground pork, put the other 1/2 pound of the pork in a blender and grind. Add the thin soy sauce and white pepper powder to the ground pork and mix until well combined. Then blanch the ground pork in lightly boiling water until done.
  • To make fried garlic, chop 6 cloves of garlic finely using a chef's knife. Heat several tablespoons of canola oil to medium heat and add the garlic. Fry until the garlic is golden brown, but not burnt. Scoop out of the oil with a strainer and drain. Save the oil that the garlic was fried in to drizzle on top of the noodles.

  • Heat oil in a large, heavy bottom saucepan over medium heat. When the oil is hot and shimmering, add the lemongrass, onion, cilantro, garlic and 3 tbsp fish sauce. Cook, stirring constantly for 2-3 minutes. Add 1 tbsp Thai Spice Mix and cook, stirring constantly, for 1 minute longer.
  • Add the beef and vegetable broth and bring to a simmer. Lower the heat, cover and let simmer to blend the flavors for 10 minutes. Strain the broth into a bowl through a fine mesh sieve. Discard the solids and return the broth to the saucepan. (NOTE: The broth can be refrigerated at this point for up to 5 days.)
  • Fill another large sauce pan with water, set it over high heat, and bring to a boil. Add the rice noodles and cook until al dente - about 2-3 minutes. Strain and reserve.
  • Bring the broth back to a simmer and add 2 teaspoons Thai Spice Mix, 1 tablespoon green curry paste, the mushrooms, and the bok choy. Cook for 5 minutes, until the vegetables are tender. Add the pork. Cook for another 2-4 minutes, until the pork is heated through.
