THAI SMILE BURGER

Classic burger yumminess with tons of bold, exotic flavor! The broccoli slaw and cilantro-lime mayo are divine.

Steps:

  • 1. For the Burger: saute' the mushrooms in oil till tender. Take off the stove and set aside. Next mix together the pork, ground chuck, fish sauce, green onions, curry paste and salt. Then mix in the the mushrooms with the meat mixture. Let sit in the fridge for at least 4 hours.
  • 2. For the slaw: in a frying pan on medium heat; saute' the fresh ginger, and garlic till fragrant. Add the soy sauce and brown sugar and mix for a about 30 seconds. Take off the burner and set a side.
  • 3. Next step for slaw: Mix in a medium bowl, the broccoli slaw, bell pepper, seasoned rice vinegar, sesame oil, green onions, sugar, nuts and then the ginger garlic mixture you sauteed earlier and salt and pepper to taste. Mix well and place in the fridge for about 4 hours.
  • 4. For the Cilantro Lime Mayo: In a small bowl mix together the light mayo, chopped cilantro, lime zest and lime juice. Mix well and set a side till ready to use.
  • 5. When you are ready to cook the burger. Heat your grill to meduim. ( you can use your indoor grill too.)Make 6 thick patties. Cook on each side for about 6 minutes or on your indoor grill for about 10 minutes. While the burgers are cooking toast the buns. Then slather on some cilantro lime mayo on the bun. Next when the burger is done place it on the bun and finish it off with some Asian slaw on top of the burger. ENJOY!

THE BURGER
1 lb ground chuck
1 lb ground pork
1 c fresh mushrooms coarsely chopped and sauteed
1 Tbsp olive oil
1/4 c green onions, thinly sliced
1/4 c fish sauce
1 1/2 Tbsp green curry paste
pinch of salt and pepper
ASIAN SLAW TO TOP THE BURGER
1 tsp garlic, chopped
2 Tbsp fresh ginger, finely chopped
1 Tbsp brown sugar
3 Tbsp soy sauce
1 12 oz bag of broccoli slaw
1/3 c thinly sliced red bell pepper
1/4 c seasoned rice vinegar
1/2 tsp sesame oil
1/4 c green onions
1/2 Tbsp white sugar
1/4 c coarsely chopped roasted peanuts
salt and pepper to taste
CILANTRO LIME MAYO
1 c light mayo
2 Tbsp fresh cilantro, chopped
1 Tbsp fresh lime juice
1 tsp lime zest
A GOOD QUALITY BUN. I USED A CIABATTA BUN.

  • Preheat grill for high heat.
  • In a large bowl, mix together ground round, bread crumbs, lemon grass, shallot, chili peppers, and peanuts. Season with salt and pepper. Form into patties. If you are making these ahead of time, do not add peanuts until you are ready to grill.
  • Lightly oil grate, and place burgers on grill. Cook for 3 to 5 minutes per side. Remove from grill, and sprinkle burgers with lime juice.

Steps:

  • Place mince, breadcrumbs, curry paste, spring onions and egg into a large bowl. Season lightly, then mix well with your hands to combine. Divide into 4 and shape into burgers. Chill for 20 mins.
  • Meanwhile, make the salsa and mayo. Brush the burgers with oil and grill for 7 mins each side, or until firm, golden and cooked through. Alternatively, cook on the barbecue.
  • Once cooked, toast the rolls, cut-side up, under the grill. To serve, top the rolls with a turkey burger, add lettuce, cucumber, tomato slices and a spoonful of mayo or salsa and put the lids on.

Steps:

  • Whisk egg and soy sauce together in a bowl; add cilantro, green onions, ginger, garlic, salt, and pepper. Mix turkey and bread crumbs into mixture and mix well; form into 4 patties.
  • Heat a large non-stick skillet over medium heat. Place patties in the hot skillet; cover skillet and cook, turning once, until burgers are no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Add Cilantro (leaves and stems) to a food chopper or processor, along with garlic cloves, Thai birds eye chili, and soy sauce. Pulse till everything is incorporated and chopped up. Add mixture to your ground meat, mix just until incorporated, and place in the fridge for a few minutes to firm up. Especially if you are using ground turkey, this helps to form the burger patties a little easier.
  • Using a peeler, peel long thin strips of cucumber and carrot. Then place in a jar with pickle juice and refrigerate for 30 minutes. If you don't have pickle juice then mix vinegar with a little sugar and quick pickle the cucumber and carrots.
  • Form 4 burger patties, larger than the bun size, season the patty lightly with salt and pepper. Cook on a grill or cast iron skillet. I cook ground beef to around 155 degrees F and ground turkey to 165 degrees F. Use an instant read thermometer on the patties.
