THAI SPICY FRIED PORK

This is a great dish for when you are in a hurry. It's ready before you are. Quick and very easy to make, with great results. I love that I always have these ignredients on hand to make unique tasting dishes. My guests are seldom disappointed.

Thai Spicy Fried Pork image

Steps:

  • Heat the oil over medium heat, in a large pan and add the garlic, shallots and ginger. Fry for 3 minutes.
  • Add the pork and fry until golden brown about 5 - 8 minutes .
  • Stir in the fish sauce, soya sauce, curry paste, brown sugar, lime leaves and fry for 3 minutes over high heat.
  • Next add the tomatoes and cook 6 minutes, stir occasionally.
  • Season with the cilantro, salt and pepper, remove from heat and serve hot over the egg noodles and garnish with the cilantro sprig.

4 kaffir lime leaves, dried, crumbled (I use frozen when I don't have dried)
4 plum tomatoes, coarsley chopped
3 tablespoons cilantro, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
4 sprigs cilantro (garnish)
4 cups egg noodles, fine, cooked

Thai Pork and Noodles image

Steps:

  • Place the pork in the freezer about 10 minutes to make it easier to slice. Soak the noodles in very hot water until just tender, about 10 minutes; drain. Snip the noodles with scissors into shorter lengths. Cut the frozen pork crosswise into 1/4-inch-wide strips.
  • Puree the cilantro, lime zest and juice, ginger, garlic, jalapenos, shallots, fish sauce, brown sugar and 1 tablespoon water in a food processor until smooth, scraping down the processor as needed.
  • Heat 3 tablespoons peanut oil in a large skillet over high heat. Add half the cilantro mixture and stir-fry 1 minute. Add the pork and stir-fry until no longer pink, 2 to 3 minutes. Transfer the pork with a slotted spoon to a plate. Add the remaining 1 tablespoon peanut oil to the skillet; add the green beans and stir-fry until tender, 4 to 5 minutes. Add the noodles, pork and 2 tablespoons of the remaining cilantro mixture. Cook, tossing with tongs, until heated through, about 2 minutes. Stir in the remaining cilantro mixture to taste.

1 pound thin boneless pork chops, fat trimmed
8 ounces wide Thai rice noodles

THAI PORK STIR FRY

I found this recipe in a magazine a number of years ago. It is so easy it has become a favorite recipe of mine. The balance of sweet and salty flavors is nice. You can add other vegetables as desired. I sometimes add bean sprouts, celery and mushrooms to this dish.

Steps:

  • Saute garlic, red onion, carrots and red pepper in oil in nonstick skillet over high heat for 5 minutes.
  • Add pork, cook for 3 minutes or until no longer pink.
  • Add chicken broth, fish sauce, peanuts and brown sugar.
  • Add rice noodles, broken in half (submerge in liquid).
  • Cover and cook over low heat for 6 minutes.
  • Stir in cornstarch mixed with water; cook until thickened.

  • In a medium bowl, mix peanut butter, green onions, soy sauce, lemon juice, brown sugar, garlic, coriander, and cayenne pepper; add pork, and stir to coat. Cover, and marinate in the refrigerator at least 30 minutes.
  • Preheat grill for high heat. Thread marinated pork, water chestnuts, green bell pepper, red bell pepper, and sweet onion alternately onto skewers. Transfer remaining marinade to a small saucepan, bring to a boil, and cook for several minutes.
  • Lightly oil grate. Cook skewers for 10 minutes, or to desired doneness. Turn skewers while grilling to cook evenly, and brush with boiled marinade during last few minutes.

  • To make this classic Thailand stir fry, start with a nice piece of pork belly with about 50% fat, with the outer skin intact. If you don't like to eat fatty meats, then you can use lean pork slices.
  • Cut the pork belly into long, 1 inch pieces with the grain of the meat, then cut it into thin slices, across the grain. You'll need about 2 cups of sliced meat.
  • Cut the yard long green beans into 1 inch pieces. You can use any type of fresh green bean. You'll need about 2 cups of beans. Some people use a lot more, and you'll see this dish done where it is really a green bean dish with some pork, rather than a pork dish with beans.
  • Use about 2 Tablespoon of quality red curry paste. If you want to have more fun with this recipe, then make my homemade red chili paste with This Recipe first.
  • Remove the cooked meat from the pan with a slotted spoon and set it aside. Pour off the excess oil so that you have only about 2 tablespoons left in the pan, then stir whatever browned crispy parts from around the pan back into the oil to get all the flavor mixed in.
  • Add the fried pork belly back the the pan and stir it into the chili well. Fry for about 2 minutes over high heat until very hot and sizzling.
