CHEF JOHN'S DEVILED SHRIMP RAGU
This subtly sweet, fairly fiery shrimp ragu served over my creamy corn custard would make a fantastic first course for any dinner, and it's certainly rich enough to be enjoyed as a entree. You can also pour this over rice or noodles with complete confidence.

Steps:
- Place shrimp shells into a saucepan with bay leaf and 1 pinch of smoked paprika over medium-low heat; cook and stir shells until they turn pink, about 5 minutes. Pour in water, bring to a simmer, reduce heat to low, and simmer shrimp stock for 20 to 25 minutes.
- Mix lemon juice, ketchup, brown sugar, ground chipotle pepper, 1/2 teaspoon smoked paprika, garlic, 1 pinch of salt, and cayenne pepper in a bowl.
- Strain shrimp stock into a bowl; discard shells and bay leaf. Whisk shrimp stock into ketchup mixture and set aside.
- Heat vegetable oil in a large skillet over high heat until small wisps of smoke rise from the skillet. Cook shrimp in the hot oil until bottom sides of shrimp are seared and browned, about 3 minutes. Stir in shrimp stock mixture and cook until shrimp are opaque, about 3 minutes. Transfer shrimp to a bowl using a slotted spoon, leaving sauce in skillet.
- Bring sauce to a boil and cook until sauce has reduced and thickened, 3 to 4 minutes. Stir in cold butter, turn off heat, and let residual heat of pan melt butter. Stir until butter has incorporated into sauce and sauce is slightly thickened.
- Stir shrimp into sauce and toss with chives. Serve shrimp with sauce.

DEVILS ON HORSEBACK
A family favorite my uncle makes. They are a wonderful balance between salty and sweet, with a combination of crispy, chewy, and crunchy textures. My family destroys a tray of these in fifteen minutes.

- Preheat oven to 400 degrees F (200 degrees C). Soak the toothpicks in a bowl of water. Grease a 9x13-inch baking dish.
- In a bowl, mix together the soy sauce and ground ginger. Place the brown sugar into a shallow bowl. Spread open a pitted date, then stuff it with a smoked almond. Wrap the date with half a bacon slice, secure it with a toothpick, dip the bundle in soy sauce mixture, and then dip it into brown sugar. Place the wrapped dates into the prepared baking dish. If desired, sprinkle a little more brown sugar over the bundles.
- Bake in the preheated oven until the bacon is brown and crisp, 15 to 25 minutes. Allow to cool for about 15 minutes before serving; serve warm or at room temperature.

Soooooo good , I love shrimp so this dish is one of my favorite,if you love shrimp try the recipe.

- Bring a large pot of water to a boil, salt it, add the pasta and cook unti al dente. Drain, reserving about 1/2 cup of the pasta cooking water.
- While the pasta is cooking, in a large, deep skillet, heat the EVOO, 4 turn on the pan, over medium heat. Stir in the anchovies to melt. Stie in the chile for 1 minute, then stir in the garlic for 2 minutes. Stir in the wine to reduce slightly, about 1 minute. Stir in the chicken stock, then stir in the tomatoes and crush with a potato masher.Season with the marjoram, salt and pepper. Simmer over medium heat until reduced, about 20 minutes. Season the shrimp with salt and pepper then lemon juice in a large, deep skillet, melt the butter over medium heat. Add the shrimp and cook until pink, 2 minutes. Add to the sauce. Stir in the paste and reserved pasta cooking water and toss.Serve on a warm platter or in shallow bowls, Top wih the basil and mint to cool thing down.
THE DEVIL'S BEEF TUB
A dramatic and breathtaking hollow in the hills to the north of the Scottish town of Moffat in Dumfries and Galloway, the Devil's Beef Tub can be viewed from the A701 road from Broughton as it twists downwards into Moffat. Located near the border between Annandale in the south and Tweedale in the north, it is dominated by the Great Hill which rises to 1527 feet. At the bottom of the hollow is a martyred Covenanter's grave. The Devil's Beef Tub was also known as the Marquis of Annandale's Beef Stand on account of its use by the men of Annandale as a place to hide stolen cattle.

- Preheat oven to 425°F.
- Rub the beef with oil and season with salt and pepper.
- Place it in a roasting pan and roast for 30 to 40 minutes or until meat reaches desired doneness, for example 130°F for rare, 140°F for medium-rare.
- Remove the meat from the oven when the temperature is 10 degrees shy of desired doneness since roast will finish cooking as it rests.
- Add the shallot to roasting pan.
- Heat the Drambuie in a small saucepan over low heat until warmed.
- Pour the Drambuie over the beef and quickly ignite, using a long match.
- When the flame goes out, remove the beef to a serving platter and hold, loosely covered.
- Add the flour to the roasting pan and cook over medium heat, stirring constantly, for 1 minute.
- Whisk in the beef broth, mustard and Worcestershire sauce.
- Bring to a boil and whisk until smooth.
- Season to taste with salt and pepper.
- Transfer to gravy boat.
- Slice the beef and serve with sauce.
- Quit drooling and eat it.
AVERY ISLAND DEVILED SHRIMP
Put a little "boing" in your shrimp. Avery Island, LA is the home of Tabasco Sauce. The "island" is basically sort of a "salt hill" in the wetlands, formed by ancient deposits. A lot of that salt ends up in your Tabasco Sauce, along with some nice ripe red chile peppers and wine vinegar. It's one of my favorites, and this recipe adds a little Tabasco pizazz to your party.

- Cook breaded shrimp in 3 tablespoons butter until browned.
- Remove from heat and keep warm.
- For the sauce: Saute onion and garlic in the 2 tablespoons butter.

- Combine shrimp, wine, lemon peel, 1 to 1 1/2 teaspoons chili garlic sauce, and salt in non-reactive dish. Marinate for 15 minutes.Remove shrimp and drain on paper towels; discard marinade. Wrap each shrimp in a piece of bacon, securing bacon by skewering shrimp with wooden toothpick (neck to tail in a half-moon). Preheat broiler.
