THE EMPRESS SCONES
I recently had the pleasure of visiting The Empress Hotel in Victoria, BC where they have a lovely tea room. This is one of the recipes used over the years at their Afternoon Tea.

Steps:
- Crumb flour, butter, sugar, baking powder and salt.
- Add 5 eggs, slowly and separate the 6th egg and add the white into the batter; the yellow half of the 6th egg is used to do the egg wash.
- Add raisins.
- Add cream and mix into a smooth dough.
- Roll out to 1/2-inch thickness.
- Cut into desired size and shape.
- Egg wash scones and bake at 350 degrees for 25-30 minutes.
- Serve with clotted cream and jam.

- Blend together cream cheese and mayonnaise.
- Add fresh dill and season to taste with salt and pepper.
- Spread mixture onto a slice of rye bread.
- Add smoked salmon and top with other slice of rye.
- Cut off crusts and slice into squares or triangles. Sandwiches should be small for finger food.
- "If Teapots Could Talk" -- If the cook cuts bread in an uneven fashion, it is said to be a sure sign that lies have been told.

- Add eggs slowly.
- Add raisins.

ROYAL TEA ROOM SCONES
This recipe is George McNeill's of the Royal York Hotel in Toronto. If you like scones, this is worth making! Enjoy with afternoon tea or bedtime snack.

Steps:
- In a large bowl, combine flour, sugar, baking powder and salt.
- With pastry blender or fingertips, rub in butter until mixture resembles coarse crumbs.
- Stir in raisins (optional).
- Make a well in the centre of the flour mixture.
- In a small bowl, use a fork to beat eggs and milk until blended; pour into well.
- Use fork to mix with quick, light strokes to make a soft, slightly sticky dough.
- Press dough into ball and knead gently on floured surface 10 times.
- Pat dough into 3/4 inch thick circle.
- Cut out, using 1 1/2 inch floured round cutter.
- Place rounds on greased baking sheet.
- Brush tops of scones lightly with glaze, and bake in 425 degree F oven for 15 minutes or until golden.
- Serve with strawberry preserves, clotted cream and tea.

- Spread the butter and mayonnaise on both slices of bread.
- Add thinly sliced cucumber to one slice of bread.
- Add seasoning to cucumbers.
- Top with the other slice of bread.
- Cut off crusts and slice into squares or triangles. Sandwiches should be small for finger foods.
- OPTIONAL: Add horseradish to the mayonnaise to give the sandwich a bit of a bite.
