  • Chill cocktail shaker and glass (champagne flute or collins glass) in the freezer. Add ice to shaker. Pour gin, simple syrup, and lemon juice into shaker. Shake well. Fill chilled glass half full of ice, then strain cocktail into the glass. Top with champagne and garnish with a lemon slice.

Most people think nothing of popping a bottle of Champagne on New Year's Eve. Yet after that first celebratory glass, few consider taking an extra step and using the wine as the foundation for a cocktail or two. "They're bright and crisp and delicious," said Meaghan Dorman, a bartender at Raines Law Room in the Flatiron District. And ideal for New Year's Eve. "They are usually low in spirit, so if I'm out having a few drinks, I would have French 75s. It's wine and spirit, so I'd feel I wasn't overdoing it on superstrong spirit drinks." She and her fellow bartender Lauren Davis call this judicious drinking tactic the Champagne Maintain. "It's our theory on lasting all night and still staying a lady," Ms. Dorman said.

Steps:

  • Make simple syrup: In a saucepan over low heat, warm sugar in 1 cup water until dissolved. Cool to room temperature before using. (There will be extra syrup; refrigerate if not using immediately.)
  • In a cocktail shaker filled with ice, shake gin or Cognac, lemon juice and 1/2 ounce simple syrup.
  • Strain into chilled flute or cocktail coupe. Top with Champagne. Garnish with lemon twist.

Steps:

  • Put a sugar cube in each of 6 Champagne glasses. Use a vegetable peeler to remove a few pieces of orange peel. Trace around the rim of each Champagne glass with the orange peel to give it that hint of orange. Halve the orange and squeeze some juice into each glass. Add a squeeze of lemon juice to each glass also.
  • Add 1-ounce of gin to each glass. Stir to blend and top with sparkling wine. Serve immediately. This can be made in a pitcher as well.

Steps:

  • Pour the lemon juice, sugar syrup and gin into a cocktail shaker then fill up with ice.
  • Shake well then strain into a champagne flute. Top with a little champagne, leave to settle (as it will bubble up) then fill up with more champagne. Swirl gently with a cocktail stirrer then garnish with a strip of lemon zest if you like.

Steps:

  • Using zester or paring knife, slice peel from lemon in long, thin spiral. Reserve lemon for another use and set peel aside.
  • In cocktail shaker, combine gin, lemon juice, and simple syrup. Add ice and shake vigorously for 20 seconds. Strain into chilled Champagne flute and top with sparkling wine.
  • Curl lemon peel around finger to create twist at least 6 inches long. Garnish drink with twist and serve immediately.
