SNICKERS COOKIES
Though you wouldn't know by looking, you'll find a sweet surprise inside these Snickers cookies. My mother got this recipe from a fellow teacher at her school. It's a great way to dress up refrigerated cookie dough. -Kari Pease, Conconully, WA

- Preheat oven to 350°. Cut dough into 1/4-in.-thick slices. Place a candy bar on each slice and wrap dough around it. Place 2 in. apart on ungreased baking sheets. Bake until lightly browned, 8-10 minutes. Remove to wire racks to cool.

- Combine butter, peanut butter, and sugars using a mixer on medium to low speed until light and fluffy. Slowly add the eggs and vanilla until thoroughly combined. Then mix in your flour, salt, and baking soda. Cover and chill dough 2-3 hours up to a couple of days. Remove dough from fridge. Divide dough into pieces about 1-2 tablespoons, and flatten. Place a snickers mini in center of each. Form a ball around the snickers mini, taking care to cover it all. Place on cookie sheet and bake at 325°F for 10-12 minutes. Adjust time as needed if using more than 1 tablespoon dough. Let cookies cool 1-2 minutes then remove to rack to cool completely. Drizzle melted milk chocolate over each cookie in a zig zag pattern. I have used Kisses, Dove milk chocolate, or milk chocolate chips.

- In a medium bowl, stir your dry ingredients until combined: 1¼ cups all purpose flour, 2 tbsp cornstarch, ½ tsp baking soda and ½ tsp salt. Set aside.
- In a large bowl using an electric hand mixer or in the bowl of a stand mixer fitted with the paddle attachment, cream ½ cup butter and ¾ cup brown sugar until light and fluffy (about 2-3 minutes on medium speed). Add the egg and 1 tsp vanilla extract and continue to beat until incorporated.
- Add your flour mixture into your butter mixture and stir on low speed until combined and no more streaks of flour remain.
