FAMOUS LASAGNA
From here on, this cozy classic will become Your Famous Lasagna, sure to star at weekend parties and weeknight meals for years to come. The noodles are layered with rich meat sauce and creamy ricotta mixed with bright flecks of fresh parsley, and gooey mozzarella helps keep the whole creation together.

- Preheat oven to 400 degrees. Bring a large pot of water to boil. Generously salt water; add noodles and cook according to package directions. Drain, and rinse with cold water. Lay noodles on a baking sheet, separating layers with parchment or waxed paper.
- In a medium bowl, combine ricotta, parsley, and egg. Season with 1 1/2 teaspoons salt and 1/4 teaspoon pepper.
- Lightly coat a 9-by-13-inch baking dish with olive oil. Begin layering: Place 4 noodles in dish, slightly overlapping. Top with half the meat sauce and 4 more noodles. Top with half the ricotta filling, then half the mozzarella. Repeat the layering process, ending with the mozzarella. Sprinkle top with Parmesan.
- Cover with lightly oiled foil. Place on a rimmed baking sheet; bake for 30 minutes. Uncover, and bake until bubbling and browned, 30 to 40 minutes more. Let cool 10 minutes before serving.
THE PERFECT LASAGNA
This is the best lasagna I have ever had. A friend taught me by cooking it with me. I've guessed at the actual amounts used, so feel free to do your own amending.

Steps:
- Chop the onion, garlic, mushrooms, bacon, olives and sun dried tomatoes before you start to cook.
- Cook the onions and garlic first.
- Add the beef and brown about half-way through.
- Add green pepper, mushroom, olives, sun-dried tomatoes and bacon.
- Add the stewed tomatoes. Cut them apart with the spatula or a knife as you add them.
- Add as much red wine and balsamic vinegar as you wish. (I think the secret of the lasagna is in the wine and vinegar though, so I add about 3 tablespoons and a 1/4 of a cup).
- Add salt, pepper, and oregano to taste.
- Let the sauce stew as long as needed (the longer the better).
- Meanwhile, heat the milk gently in a saucepan.
- Add the flour gradually, stirring constantly. Add the parmesan cheese to the sauce as well.
- When the white sauce is thicker than pancake mix (about 10 minutes), remove from heat.
- In an 8x8 or round lasagna dish, layer like this: meat layer, lasagna sheet, white sauce.
- Finish with a white sauce layer and cover with mozzarella cheese.
- Cook at 350 for about 20 minutes or until the cheese is bubbly.

- Heat oven to 350°F.
- Brown meat in large skillet on medium-high heat. Meanwhile, combine egg, ricotta, parsley, 1-1/4 cups mozzarella and 1/4 cup Parmesan.
- Drain meat; return to skillet. Stir in pasta sauce. Add 1 cup water to empty sauce jar; cover with lid and shake well. Add to meat mixture; stir until blended.
- Spread 1 cup meat sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with layers of 3 lasagna noodles, 1/3 of the ricotta mixture and 1 cup of the remaining meat sauce. Repeat layers twice. Top with remaining noodles, meat sauce and cheeses. Cover with foil sprayed with cooking spray.
- Bake 1 hour or until heated through, removing foil after 45 min. Let stand 15 min. before cutting to serve.

Part of its appeal is that the ingredients used are totally basic; you don't have to hunt down fresh basil or buffalo mozzarella or Parmigiano-Reggiano or handmade sausage from from an Italian mama in old Napoli. Anyone can make this, anywhere, anytime. And it's the easiest thing in the world." Aside from the simplicity and availability of ingredients, however, this lasagna is just dadgum good.

- Bring a large pot of salted water to a boil.
- Preheat oven to 350 degrees.
- Meanwhile, in a large skillet or saucepan, combine ground beef, sausage, and garlic.
- Cook over medium-high heat until browned.
- Drain half the fat; less if you're feeling naughty.
- Add tomatoes, tomato paste, 2 tablespoons parsley, basil and salt.
- Set aside.
- In a medium bowl, mix cottage cheese, beaten eggs, grated Parmesan, 2 more tablespoons parsley, and 1 more teaspoon salt.
- Stir together well, set aside.
- Cook lasagna until "al dente" (not overly cooked).
- To assemble:.
- Arrange 4 cooked lasagna noodles in the bottom of a baking pan, overlapping if necessary.
- Spoon half the cottage cheese mixture over the noodles, spread evenly.
- Cover cottage cheese with a layer of mozzarella cheese.
- Spoon a little less than half the meat mixture over the top.
- Repeat, ending with meat mixture.
- Sprinkle top generously with extra Parmesan.
- Either freeze, refrigerate for up to two days, or bake immediately:
- 350-degree oven for 20 to 30 minutes, or until top is hot and bubbly.

- Should you want to make the pasta at home, spread the pasta rather thin and boil it in water with a drizzle of oil to prevent the sheets from sticking to the each other, or boil one sheet at a time and once drained place it in cold water.
- If you buy fresh egg pasta, the process is the same as for homemade pasta. If you buy packaged dried sheets then you absolutely must cover them well with the filling, without leaving a single corner exposed.
- There shouldn’t be too much or too little filling. Too much between one layer and another will keep you from ever getting a perfect slice. Too little and all you’ll taste is pasta.
- Do not put large pieces of vegetables or meat in lasagna for the same reason as above. To get a perfect lasagna, the filling should be finely sliced or even creamy.
- If using parchment paper, remember to remove it once the lasagna is cooked. Otherwise, it will get wet and ruin the base. It’s better to grease an oven dish or to streak it with béchamel sauce.
- Don’t overdo it with the béchamel, a necessary ingredient in many recipes, particularly for the consistency it lends to the taste, but one which can ruin the dish if there’s too much of it.
- Lasagna should be cooked for at least 45 minutes in a hot oven at 350°F, though it really depends on the number of layers. To prevent an overcooked surface and an undercooked center, cover with aluminum foil halfway through the cooking process.
- Particularly when using store-bought dry pasta, be careful when cooking the corners. Cover them well with the filling and add a drizzle of water or milk to soften them once in the oven.
- Though it may seem obvious, any meat or vegetables in the filling must be cooked first. Vegetables can even be simply blanched, but putting them raw into the filling is highly risky.
- Don’t eat it now. Like a good eggplant parmigiana, baked pasta should always be left to rest. Forget about eating it fresh out of the oven ... it’s actually better the next day!
