ASPARAGUS WITH BROWN BUTTER
Writing in 1991, Jacques Pépin talked of his love of asparagus, stemming back to his childhood in France. His approach to the vegetable is as uncomplicated as it gets. "It is best when cooked in just enough water to steam it," he wrote. "It is ready - tender but still a bit firm to the bite - after a few minutes." Topped with a brown butter sauce, it's a perfect accompaniment to meat, poultry or fish, but also just as at home with some white rice, part of a simple weeknight meal.

Steps:
- Peel the lower part (root end) of the asparagus stalks with a vegetable peeler.
- In a large nonreactive saucepan, bring the water to a boil. Add the asparagus in one layer, cover and cook over high heat for about 6 minutes, to the desired tenderness. Lift asparagus from the water (most of it should have evaporated) and arrange on a platter.
- Meanwhile, heat the butter in a skillet until it is lightly browned and stops smoking. Sprinkle the asparagus with the salt and pepper, and pour the hot butter over it. Garnish with parsley, and serve immediately.

RAVIOLI + ASPARAGUS IN A LEMON-BROWN BUTTER SAUCE
I found this recipe along with photo from the web site - Kelly's Ambitious Kitchen. I love ravioli! I usually buy the frozen kind and just heat up with a normal meat sauce but I wanted to try something new. I am glad to share this recipe with you all. Enjoy!

- 1. bring a large pot of water to a boil.
- 2. while waiting for the water to boil, measure + cut your ingredients to have everything ready! in a large skillet, melt the butter over medium heat until frothy.
- 3. add chopped asparagus to the pan, stir slightly to coat asparagus with butter + cover with the pan with a lid. cook until tender {about 5 minutes, depending on the size of the asparagus. you want it to stay crisp + not get soggy!}
- 4. while the asparagus is cooking, add the ravioli to the boiling water + cook according to the package instructions. drain the ravioli when done + add to a bowl.
- 5. when the asparagus is done, remove asparagus with a slotted spoon, leaving the browned butter in the skillet. add asparagus to the bowl of ravioli.
- 6. add the lemon juice + black pepper to the pan with the remaining browned butter. bring to a boil, let boil for 1 minute. then pour the lemon-brown butter over the ravioli mix. add walnuts, parsley + parmesan cheese to the bowl + toss gently to combine.

This recipe was on the bunch of asparagus I bought. I bought the cheeses right there and made it that evening and it was delicious! I normally make with parmesan and this was a great change!

- Cut off bases on Asparagus and boil in water in sauce pan for 10 minutes.
- Pre-heat oven to 400.
- Cover cookie sheet or 9 x 11 pan with aluminum foil, lie Asparagus stalks on foil - season with pepper.
- Cover with slices of Brie, season with pepper.
- Cover Brie with diced cheddar, season with pepper.
- Cover Cheddar with grated mozzarella, season again.
- Place pan in oven for 10 minutes or until cheese is melted. Turn oven setting to broil and leave in for a few minutes until cheese is beginning to brown, around 5 minutes.
- Serve hot.

ASPARAGUS WITH WALNUTS, PARMESAN AND BROWN BUTTER
Here's a sophisticated yet simple way to prepare spring's trademark vegetable. Steam the asparagus. Brown a knob of butter in a sauté pan and toss in a handful of chopped walnuts, garlic and fresh thyme (lemon thyme if you can find it). Whisk in a 1/4 cup of Parmesan cheese, then pour over your awaiting asparagus. Dive in.

- Steam the asparagus until just tender, about 5 minutes.
- Meanwhile, melt the butter in a large skillet over medium heat. Cook until the foam has subsided and the butter turns a deep golden brown, about 4 minutes. (Take care that it doesn't burn.) CHEESE RAVIOLI WITH ALFREDO AND ASPARAGUS.
i enjoyed a delicious dinner at an awesome italian restaurant in Western NY. Ilio Dipaolos. It was a pasta dish sampling = which included Fettucine Alfredo and then Ravioli with a marinara sauce. Along with a a filet mignon. It was over the top delicious! So I made this dish, minus the filet mignon. I sure hope you enjoy it...

- 1. First in a saucepan, I melted the butter. I added the minced garlic, onions and parsley. I pulsed them in my mini food processor till they were finely minced.
- 2. In another pan, I added about half a cup of water, and half a cup of broth. I added my asparagus which I chopped into three inch pieces and I sauteed until they were tender. Which was about 25 minutes or so.
- 3. Once the onions became transparent, I added the heavy cream, and I blended it into the butter mixture. Once that was blended in, I added the parmesan cheese into this mixture, and blended it well. I added salt and pepper to taste. Finally add the asparagus. I drain any excess water you might have in the asparagus sauce pan before adding the asparagus to the Alfredo.
- 4. Boil the cheese ravioli according to directions.
- 5. In another saucepan, heat the Marina.
- 6. Finally, on each plate, add a serving of the cheese ravioli, and on one side of the ravioli, ladle some of the Alfredo sauce and the Marinara on the other. You get the best of both worlds!!

- COMBINE oil, lemon juice, lemon peel, garlic and salt in small bowl; whisk to combine.
- PREPARE pasta according to package directions, reserving ¿ cup cooking water. Return pasta to saucepan. Add butter, reserved cooking water and olive oil mixture; toss gently to coat. Add basil; toss gently. Season with pepper. Sprinkle with cheese. Garnish with additional basil. Serve immediately.

- Cut off the tips of the asparagus, then blanch them for 2 minutes in boiling salted water. Remove them with a slotted spoon and transfer them to a bowl of ice water. Do the same for the asparagus stalks only drain them on paper towels. When the stalks are cool enough to handle, chop them finely and place them in a medium bowl.

When they begin to float, cook for 1 minute, then remove them with a slotted spoon to a warm plate.
