- Cook spaghetti according to package directions; drain. Transfer to a large bowl. Add 1 cup mozzarella cheese, Parmesan, Romano, eggs, oil, garlic powder, salt and pepper. , Press into a greased 13x9-in. baking dish. Top with spaghetti sauce. Cover and bake at 350° for 20 minutes. - Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir until crisp-tender, 5-6 minutes. , Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain macaroni., In a small bowl, combine egg and ricotta cheese. - Cook pasta in large saucepan as directed on package, adding spinach to the boiling water for the last minute. Meanwhile, cook and stir chicken and garlic in large nonstick skillet sprayed with cooking spray on medium-high heat 3 min. or until chicken is browned. - Bring a large pot of salted water to a boil. Add macaroni and boil, uncovered, until just tender to taste. Drain, rinse with cold water and set aside.
- Preheat oven to 350 F (180 C).
- In a large pot, melt butter over medium heat and add flour. Stir with a wooden or non-reactive spoon until mixture has a lightly nutty aroma but no colour, about 5 minutes.
- Slowly whisk in milk, then bring entire mixture up to a simmer, whisking constantly. If lumps do occur, strain and return to heat. Add nutmeg and whisk in cream cheese until smooth. Reduce heat to medium-low and stir in cheddar until melted.

- Preheat your oven to 375°F and place an oven rack on the center rack. Lightly oil the inside of a 9×13 baking dish. This deep one is my favorite.
- In a small saucepan over medium heat, add your whole milk and the bay leaf. Heat the milk just until small bubbles form around the edges of the pan, then remove from heat and cover.
- Place another saucepan – a medium-sized one this time – over medium heat and add the butter. When the butter has completely melted and starts to foam a bit sprinkle in the flour. Stir the flour constantly as it cooks until it thickens into a loose paste, which will take about 2 minutes. We’re not making gravy, don’t expect it to thicken up the same.
- Remove the bay leaf and stir the milk into the flour paste. Sprinkle in the salt, pepper, and nutmeg then reduce the heat to low. Continue to cook for 2 more minutes, then remove from heat. Gently fold in the Parmesan and Pecorino Romano, then cover and set the pot aside. It will thicken more as it sits.
