THRU-THE-GARDEN-AND-ORCHARD WALDORF SALAD
I developed this version of the now-famous salad specifically hoping that someone will adopt it for this year's Recipe*Zaar 2+5 Challenge. This is an upbeat Waldorf Salad that your family will ask you to make again.

Steps:
- Make the dressing by whisking ingredients together. Refrigerate.
- Place the chopped apples in a large non-metallic mixing bowl and add the lemon juice. Toss lightly.
- Add all other ingredients (except dressing) and toss lightly.
- Add dressing and toss lightly for a final time.
- Refrigerate, covered, for one hour before serving.
- NOTE: Blanched pea pods, shocked in ice water can be substituted for the carrots if desired. Also, other types of lettuce may be used instead of iceberg.
- Also, servings (3) are based upon serving the salad as a light main dish.

SWEET AND CRUNCHY GARDEN SALAD

Steps:
- Mix the almonds with 1/4 cup of the sugar in a medium saucepan. Cook over medium heat, stirring as the sugar melts and the almonds brown. Carefully spread the almonds on an ungreased baking sheet to cool, using a metal spatula; the nuts will be very hot. When completely cooled, break the candied almonds into tiny pieces.
- Tear the iceberg and romaine lettuce into pieces and transfer them to a salad bowl. Cover and refrigerate if not serving immediately.
- Combine the oil, vinegar, remaining 1/4 cup sugar, and the parsley, salt, pepper and cayenne in a bowl, and mix well. Chill covered, in the refrigerator, until ready to serve.
- Combine the lettuce, sliced green onions, candied almonds and orange segments in a large salad bowl. Just before serving, toss the salad with enough dressing to coat the greens.
THE ORIGINAL WALDORF SALAD
"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.
