ROASTED CHICKPEA AND AVOCADO SALAD RECIPE BY TASTY

Steps:

  • Preheat oven to 400°F (200°C).
  • In a large bowl, mix together the chickpeas, olive oil, paprika, and garlic salt.
  • Spread the chickpeas onto a baking sheet in one layer. Bake for 25-30 minutes, until the chickpeas are crisp.
  • Dice the cucumber and add to a large bowl.
  • Toss in the mixed greens, cucumber, tomatoes, avocado, roasted chickpeas, extra virgin olive oil, lemon juice, salt, and pepper, and mix until well combined.
  • Divide between individual bowls and serve.

Steps:

  • Mix olive oil, lemon zest, lemon juice, garlic, dill, salt, and pepper together in a skillet over medium heat; cook and stir tilapia in the oil mixture until opaque, about 10 minutes. Transfer tilapia to a bowl and refrigerate until chilled, at least 30 minutes. Reserve liquid in skillet.
  • Combine chilled tilapia, celery, avocado, tomato, olives, jalapeno peppers, and capers in a bowl. Drizzle reserved olive oil-lemon mixture over tilapia mixture; toss to coat. Allow salad to marinate in the refrigerator, at least 30 minutes.

Steps:

  • In large bowl, whisk together lime juice, honey, vinegar, salt,garlic, ginger, cayenne and jalapeno.
  • With a vegetable peeler, remove 2 long strips of peel (orange part only) from 1 tangerine.
  • Cut strips into 1/8-inch zest matchsticks.
  • Peel tangerines and separate into segments.
  • Cut segments crosswise into 2 or 3 pieces.
  • Add avocado, zest, and tangerines to bowl, toss to combine.
  • Chill until serving time.
  • Sprinkle with sunflower seeds just before serving.
