SWEET CHEESE BISCUITS - DEE DEE'S

These sweet cheese bicuits are great served with spicy BBQ. Some claim this is the Jim n Nicks recipe. This I don't know for sure but they are very close. Hope you enjoy!

Sweet Cheese Biscuits - Dee Dee's image

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Grease mini muffin tins. (NOTE: I suggest flouring the tins, if you don't these will stick)
  • 3. Mix all ingredients together and pour into greased mini-muffin tins.
  • 4. Bake at 400º F for 20 minutes.

4 Tbsp butter, no substitute, melted
1 1/2 c all purpose flour
2 1/2 tsp baking powder
pinch of salt
1 c sugar
3/4 c milk
1 egg
1/4 tsp vanilla extract
1 c cheese, shredded (i used sharp)

Mini Cheese Biscuits image

Steps:

  • In a bowl, combine biscuit mix, cheese and garlic. With a fork, stir in milk just until moistened. Drop by rounded tablespoonfuls onto a lightly greased baking sheet. Bake at 450° for 9-11 minutes or until golden brown. Combine butter and garlic powder; brush over biscuits.

3 Ingredient Cream Cheese Biscuits image

Steps:

  • 1. Pulse together the cream cheese, butter and flour in a food processor until combined, about 10 pulses, stopping to scrape down the sides of the bowl halfway through
  • 2. Turn out onto a piece of lightly floured parchment paper and pat it into a disc shape refrigerate 1 hour
  • 3. Place an oven rack on the highest rung and preheat oven to 425 degrees F. Line a large baking sheet with parchment paper.
  • 4. Sprinkle a work surface with flour, unwrap the dough and sprinkle and a rolling pin lightly with flour.
  • 5. Roll out to a 1/2 inch thick and cut with a 1+1/4 inch thick biscuit cooker. Place them on the baking sheet about an inch apart.
  • 6. Stick the scraps together and make more biscuits. If you can't fit them all on the baking sheet refrigerate and bake them in turns.
  • 7. Bake about 14 minutes on the top rack until golden and puffed, rotating the pan halfway through. You can brush the tops with melted butter if you like.
  • 8. They are best eaten fresh and warm.!!

Steps:

  • For the biscuits: Preheat the oven to 450 degrees F.
  • Whisk together the flour, powdered milk, baking powder, sugar, cream of tartar, salt and cayenne pepper in a medium bowl. Using a pastry cutter, cut the butter bits and shortening into the dry mixture until blended thoroughly. Mix in the cheese, then fold in the buttermilk until the dough comes together.
  • On a lightly floured surface, turn out the dough and press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, 10 to 12 minutes, then set aside to cool a little.
  • For the sandwiches: Next, add the sausage patties to a skillet over medium heat and fry until cooked through. Set aside and keep warm. In the same skillet, fry the eggs, turning them over to cook the yolks through.
  • Now make a sandwich by cutting a biscuit in half. Put a sausage patty on the bottom half. Top with an egg, some hot sauce and a slice of cheese. Cover with the top and eat, or wrap in foil to keep warm.

Deep-Fried Cheesecake Bites image

Steps:

  • For the cheesecake mixture: Line a baking sheet with wax paper. Beat the cream cheese until smooth in a stand mixer fitted with the paddle attachment. Add the sugar, vanilla and graham cracker crumbs and beat until well combined. Scoop 1-tablespoon balls of the cheesecake mixture onto the prepared baking sheet. Freeze for about 30 minutes.
  • For the strawberry sauce: Meanwhile, combine the strawberries, sugar and lemon juice in a medium saucepan over medium-high heat. Cook, stirring often, until the sugar is dissolved and the berries begin to break down and to give off their juices, 5 to 7 minutes. Transfer to a blender or food processor and puree until smooth. Strain through a fine-mesh sieve to remove the seeds. Set aside.
  • For the batter: Heat 2 inches of vegetable oil in a deep, heavy-bottomed pot over medium heat until the oil registers 350 degrees F on a deep-frying thermometer. Line a baking sheet with paper towels and set aside.
  • In a medium bowl, whisk together the flour, sugar, baking powder and salt. Add the milk and whisk until smooth.
  • When the oil is ready, remove the cheesecake balls from the freezer. Working in batches, add the cheesecake balls to the batter a few at a time, turning to coat. Remove from the batter, allowing excess to drip off, and then carefully add to the oil. Fry, turning occasionally, until golden brown, 2 to 3 minutes per batch (allow the oil to return to temperature between batches). Remove from the oil with a slotted spoon and drain on the paper towels.
  • Serve warm, with strawberry sauce.

(I put my cream cheese and butter in a bowl and microwave about 30 seconds to soften it. You don't want it melted, just softened, and microwaves vary. If you try this just do it a few seconds at a time until it feels soft when you touch it.)
  • Add the milk and mix into a dough. Turn out onto a floured surface. Add enough flour until you can handle and knead the dough. Knead until it is elastic and you can roll it out to about 1/2 inch. Cut out your biscuits and place on sprayed baking sheet. Bake in preheated 425 degree oven 20 to 25 minutes. I got exactly 28 biscuits using the 2 inch cutters. I do brush tops with melted butter but it's not necessary
