These down-home-flavored cookies are a family favorite. Toasting the oats gives them an extra nutty flavor. Toasted Oatmeal Cookies image

Steps:

  • In a large skillet over medium heat, melt butter until lightly browned. Add oats, stirring constantly until golden, 8-10 minutes. Remove from the heat; cool. Combine flour and baking soda; set aside. In a large bowl, beat brown sugar, eggs and vanilla until light. Stir in dry ingredients and peanuts until well blended. Let stand for 15 minutes. Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 375° for 10 minutes or until golden. Remove to wire rack to cool.

Steps:

  • Preheat oven to 350 degrees. Spread 1 3/4 cups flour in an even layer on a rimmed baking sheet. Bake, stirring occasionally, until flour is a light caramel color and smells slightly nutty, 30 to 40 minutes. Let cool completely.
  • Pass egg yolks through a fine sieve into a large bowl. Add sugar, both butters, and remaining 1 tablespoon flour; mix until well combined and a dough forms. If dough doesn't hold together, add water as needed, a little at a time. Transfer dough to a piece of parchment; roll into a log about 1 3/4 inches in diameter. Refrigerate at least 2 hours and up to overnight.
  • Slice log into 1/2-inch-thick rounds; transfer to parchment-lined baking sheets, spacing 1 inch apart. Brush with egg wash and sprinkle with ginger or cinnamon, if desired. Bake, rotating sheets halfway through, until cookies are golden brown around edges, 12 to 16 minutes. Transfer sheets to wire racks; let cool completely.

1 3/4 cups plus 1 tablespoon unbleached all-purpose flour
3 hard-cooked egg yolks
1/2 cup plus 2 tablespoons sugar
7 tablespoons unsalted butter, preferably European-style, room temperature
11 tablespoons salted butter, preferably European-style, room temperature
1 to 2 teaspoons cold water, as needed
1 large egg, lightly beaten

TOASTED ALMOND SNOWBALLS

Browning almond flour for these cookies adds a deep layer of toasty flavor, intensifying their overall nuttiness. Feel free to substitute other nuts: Pistachios, walnuts and pecans work particularly well. Snowballs keep, stored airtight at room temperature, for about a week.

Toasted Almond Snowballs image

Steps:

  • In a medium skillet over medium heat, toast the almond flour, stirring constantly, until golden brown and fragrant, 6 to 8 minutes. Immediately pour flour into a small bowl to cool. Watch carefully: Once the flour begins to toast, it will happen very quickly.
  • Using an electric mixer fitted with the paddle attachment or a handheld electric mixer, beat butter and 1 cup confectioners' sugar on low speed until fluffy, 1 to 2 minutes. Beat in egg yolk, brandy and almond extract until well combined.
  • Reduce speed to low and gradually add all-purpose flour, salt and toasted almond flour until just incorporated.
  • Scrape the dough into an airtight container and refrigerate for at least 2 hours or overnight.
  • When ready to bake, heat oven to 350 degrees and line 2 baking sheets with parchment paper.
  • Using your hands, roll dough into 1-inch balls and place balls 1 inch apart on the prepared baking sheets. Bake for 12 to 18 minutes, until cookies begin to brown at edges. Rotate cookie sheets halfway through for even baking.
  • Place 3/4 cup confectioners' sugar into a sieve. As soon as the cookies come out of the oven, sift a thick layer of confectioners' sugar over the tops. Once cookies are cool, put remaining 3/4 cup confectioners' sugar (plus any sugar in the sieve) into a shallow bowl and toss cookies again in confectioners' sugar.

Easy Roasted Almond Cookies image

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Spread the almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 45 minutes. Watch the nuts carefully as they bake, they burn quickly. Once toasted, set the nuts aside to cool to room temperature. Finely grind the almonds in a food processor.
  • Raise oven temperature to 350 degrees F (175 degrees C). Oil a baking sheet with vegetable oil.
  • In a bowl, mix together the ground almonds, oat flour, maple syrup, and almond extract. Form the mixture into 6 balls, then flatten the balls into cookies about 1/4 inch thick. Place cookies onto the prepared baking sheet.
  • Bake until crisp and brown around the edges, 12 to 15 minutes; watch them carefully because they burn easily. Remove the cookies carefully, and allow to cool.

  • Place a rack in middle of oven and preheat to 450°. Sprinkle flour evenly over a rimmed baking sheet and toast, stirring often once top layer of flour browns, until all flour is golden, 10–15 minutes (flour will burn quickly, so check often). Let cool, then sift into a medium bowl and whisk in egg yolks and salt.
  • Using an electric mixer on medium speed, beat butter and sugar in a medium bowl, until pale and fluffy, about 5 minutes. Reduce speed to low and add flour mixture plus 2 Tbsp. water; mix just until combined (mixture will look crumbly but will hold together when pinched). Transfer dough to a sheet of parchment paper and form into a 12" log. Tightly roll up in parchment, then wrap tightly in plastic. Chill until firm, at least 4 hours.
  • Preheat oven to 400°. Slice a little dough from both ends of log to square off; unwrap and slice dough ¼" thick. Place on rounds on parchment-lined baking sheets, spacing about 1" apart. Bake cookies, rotating baking sheets halfway through, until edges are golden but centers are still pale, 10–12 minutes. Let cookies cool on baking sheets 5 minutes, then transfer to wire racks and let cool completely.
