SALTINE TOFFEE COOKIES
This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Line cookie sheet with saltine crackers in single layer.
- In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
- Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

TOFFEE CRUNCH COOKIES
Steps:
- Preheat oven to 350 degrees F.
- Cream together the butter, sugar and vanilla. Beat the eggs slightly; then add to the butter mixture and mix well. Sift flour, salt and baking soda; then add slowly to the moist ingredients and mix thoroughly. Mix in the toffee bits, oatmeal, coconut and nuts.
- Drop dough by the teaspoonful onto an ungreased baking sheet and bake for 15 minutes.
CHOCOLATE, TOFFEE AND NUT COOKIES

- Preheat oven to 325 degrees.
- Line two large heavy baking sheets with parchment paper. Finely chop the oats in a food processor. Transfer the oats to a medium bowl. Mix in the flour, baking powder, baking soda, and salt. Set aside
- Using an electric mixer,beat the butter and sugars in a large bowluntil fluffy. Beat in the eggs and vanilla. Addthe flour mixture and stir until well blended. Stir in the toffee, hazel nuts, and chocolate chips. For each cookie, drop 1 rounded tablespoonful of dough onto sheet, spaceing 1-inch apart
- Bake until cookies are golden ( cookies will flatten slightly, about 15 minutes. Cool the cookies on the baking sheet for 5 minutes. Transfer to a cooling rack cool completely

- In a large bowl, beat the butter, oil, sugars until blended. Beat in eggs, then vanilla. Combine the flour, cream of tartar, baking soda and salt; add to sugar mixture and mix well. Stir in remaining ingredients., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

Family and kids first, on Christmas Eve my sister was talking about them and said she had the recipe, so I figured holidays, family, neighbors, great time to bring back some old memories and I made them. - 1. Crust. Cream butter; add brown sugar & cream well. Add flour to creamed mixture and work it into a dough with your hands. Pat into an ungreased 9" sq. pand and bake 10 mins. in oven at 350.
- 2. Topping. Beat egg whites until light, then stir in brown sugar & mix well. Add vanilla. Set aside. Sift flour, baking powder & salt together and stir into the brown sugar mixture. Beat until smooth. Add nuts & coconut, mix well. Spread evenly over slightly cooled baked bottom layer in the pan. Bake 25 mins. in oven at 350. Cool & cut into squares.

- Preheat oven to 350 degrees F.
- Sift together flour and baking soda.
- Cream together butter, sugar, brown sugar, and vanilla.
- Add eggs one at a time.
- Add toffee pieces to mixture.
- Mix creamed mixture and dry mixture together.
- Use rounded tablespoon to measure dough.
- Place dough at least 2 inches apart on baking sheet.

MACADAMIA TOFFEE CHIP COOKIES

- Preheat the oven to 350 F degrees. Line baking sheet with a Silpat baking mat or parchment paper, and set aside (it's even better if you have two sets of baking sheets and Silpats).
- In the bowl of an electric mixer fitted with the paddle attachment, combine butter and sugars and beat on medium speed until light and fluffy, about 2 minutes.
- Scrape down sides of the bowl and add eggs and vanilla extract, and beat to combine.
- In a medium bowl, whisk flours, baking soda, and salt until combined.
- Add dry mixture to the wet mixture in electric mixer bowl, then add in the toffee chips and macadamia nuts.
- Scoop dough out onto prepared baking sheets using a 1/2-ounce ice-cream scoop, placing them about 2 inches apart.
- Flatten cookies slightly with the palm of your hand.
- Bake at 350 degrees F until golden and just set, about 15 minutes. If you have two sets of baking sheets and Silpats, as recommended, rotate the sheets between the oven racks halfway through to ensure even browning.
- Transfer the sheets to a wire rack to cool, about 5 minutes.
- Transfer cookies from sheet to rack to cool completely.
- Store in an airtight container for up to 1 week.
- Note: this is an adopted recipe, and I have not had the chance to make them, yet.
