THROWDOWN'S SLOPPY JOES
Steps:
- For the BBQ Sauce:
- Heat the oil over medium-high heat in a heavy-bottomed medium saucepan. Add the onions and cook until soft, 3 to 4 minutes. Add the garlic and cook for 1 minute. Add the ketchup and the water and bring to a boil. Reduce the heat and simmer for 5 minutes. Add the remaining ingredients and simmer until thickened, stirring occasionally, about 10 minutes.
- *Transfer the mixture to a food processor and puree until smooth, season with salt and pepper, to taste. Pour into a bowl and allow to cool at room temperature. Sauce will keep for 1 week in the refrigerator stored in a tightly sealed container.
- For the Garlic Toast:
- Combine the butter and garlic in a small saucepan and cook over low heat until the butter is melted. Season with salt and pepper, to taste. Remove from the heat and let sit 5 minutes.
- Preheat the broiler.
- Put the bread on a baking sheet and broil until both sides until lightly golden brown, about 1 minute per side. Remove from the oven and brush them with the garlic butter. Transfer to a serving platter and set aside until ready to serve.
- For the Neat Joes:
- Heat the oil over high heat in a large high-sided saute pan until the oil begins to smoke.
- Add the beef, breaking it up into small pieces using a metal spatula or wooden spoon, season with salt and pepper, to taste, and cook until golden brown. Remove with a slotted spoon to a plate. Drain off all but 1 tablespoon of the fat from the pan. Add the onion and celery and cook until soft, about 3 minutes. Add the poblano, bell peppers and garlic and cook for 1 minute. Add the ancho powder and cook for 30 seconds. Add the BBQ sauce, 1/4 cup of water and the ketchup, bring to a boil and cook, stirring occasionally, until slightly thickened, about 5 minutes. Reduce the heat to medium-low, stir in the mustard, Worcestershire, honey, brown sugar and molasses. Cover and simmer for 15 minutes. Remove the cover, return the meat to the pan and continue cooking until slightly thickened, about 10 minutes longer. Add the vinegar, season with salt and pepper, to taste, and stir in the 1/2 cup of parsley or cilantro.
- Top slices of the garlic bread with some of the sloppy joe mixture, sprinkle with cilantro or parsley.
- *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

- Place the lentils in a medium saucepan and cover with water. Bring to a boil. Add 1 teaspoon salt. Reduce the heat to low and simmer until tender, about 30 minutes. Drain.
- Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and saute until the onions are translucent and the pepper is tender, 7 to 8 minutes. Add the garlic and green chiles and cook about 1 more minute. Stir in the tomato sauce, ketchup, Dijon, brown sugar, Worcestershire, chili powder, vinegar, celery seed, black pepper, remaining 1/2 teaspoon salt and 1/2 cup water. Mix well, then add the lentils. Reduce the heat to low; cover and simmer, stirring occasionally, about 15 minutes.
- Butter both sides of the hamburger buns. Toast on a hot cast-iron griddle or skillet until lightly browned, 2 to 3 minutes.
- Serve sloppy joes on toasted buns, topped with sliced avocado and pickles on the side.

- Set a heavy-based pot over medium-high heat and add a 3-count of olive oil. Add onions and saute for 2 to 3 minutes until translucent. Add ground turkey, season well with salt and pepper and brown well all over, breaking it up with a wooden spoon - about 7 to 10 minutes. Add ketchup, mustard, cayenne, brown sugar and tomato paste. Reduce heat and simmer for 10 to 12 minutes. Finish with a splash of red wine vinegar and season it once more before serving on parker rolls with Homemade Bread and Butter Pickles.
- Wash cucumbers, slice into 1/4-inch thick rounds, and place in a heated, sterilized mason jar with horseradish and fresh dill weed.
- Set a large pot over medium heat and add vinegar, sugar, water, garlic and pickling spices. Bring the brine to a boil then pour over cucumbers and horseradish in still-hot mason jar and seal lid. Allow to cool to room temperature before refrigerating. You can serve once chilled, but for best flavor serve after the pickles have been left overnight.

- Place the block of tofu onto a plate, then place another plate on top. Set a 3 to 5 pound weight on top (a container filled with water works well). Press the tofu for 20 to 30 minutes, the drain off and discard the accumulated liquid.
- Preheat an oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Cut the block of tofu down the middle, then widthwise into 1/4 inch thick squares. Arrange on the prepared baking sheet.
- Bake in the preheated oven for 6 minutes, the turn the pieces over, and continue baking 5 minutes more. Remove the baking sheet from the oven, and allow to cool. Once the tofu is cool enough to handle, cut into 1/4 inch dice.
- Heat the vegetable oil in a large skillet over medium heat. Stir in the onion and green pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the diced tofu, ketchup, sugar, mustard, and vinegar; season to taste with salt. Bring to a simmer over medium-high heat, then reduce the heat to medium-low, and simmer for 10 minutes. Serve on the whole wheat hamburger buns.

- In a medium skillet, heat a drizzle of olive oil over medium heat. Once the oil begins to shimmer, add the onion and cook for 2-3 minutes, until semi-translucent.
- Add the bell pepper and cook for another 2-3 minutes, until the onion is translucent.
- Add the garlic, chili powder, cumin, paprika, and salt and cook 2-3 minutes more, until the garlic is soft and fragrant. Season with salt.

- Crumble the tofu to small bits (this can take a bit of time).
- Heat oil in frying pan and add tofu and chili powder (added to taste, I add tons, about 4-5 tbsp).
- Cook on medium high heat until tofu is crispy.
- Add garlic and onion and cook 5-7 minutes.
- Add tomatoes, a dab of ketchup (the more you add the sweeter it will be so omit it if you don't like sweet) and a dab of mustard and a drizzle of extra oil if you like.
- Let simmer, bubbling until sauce is thickened and tofu is tasty (about 30 minutes).
- I like to give it a lot of time to simmer so it's really tasty.
- Serve on whole wheat buns with salad and homemade fries.

- Preheat the oven and bake the Tater Tots as the label directs. Toss with 1/2 teaspoon chili powder and 1/4 teaspoon garlic powder; season with salt and pepper.

TOFU SLOPPY JOES
My veggie version of an American favorite made with tofu. My boyfriend who recently turned vegetarian loved them and said the sauce was even better than store-bought. - Heat 1 tablespoon olive oil in a large skillet over medium-high heat and add diced onion. Cook until soft, 3 to 4 minutes. Add cumin and salt; saute until fragrant, about 2 minutes.

TOFU TSO'S FOR AVERAGE JOES
I can't stand tofu, but this stuff rocks. It actually tastes good, and my tofu-hating husband said it wasn't bad--which is great in my book. This tastes better to me than the chicken version. So, don't freak out about the deep frying...you'll live. It doesn't taste like flab, like tofu often does. Go on, give it a try!

- Open box of tofu carefully, and put tofu on cutting board.
- Slice lengthwise into 4 equal portions, and lay flat on a double-thickness of towel(or, I like unused clean cloth diapers--they absorb really well, without lint), place another double-thickness on top, and place a baking sheet on top of all, and weigh down with something heavy, like a book, or baby, or something.
- Let it sit, and if you want to change the towels, even better. Give it about 20 minutes.
- Cut the pieces into 3/4 inch cubes, about the size of dice.
- Beat the eggs and water together.
- Place cornstarch and bullion powder in another bowl, and stir together.
- Heat about 2-3 inches of oil to about 350 degrees.
- Dip pieces of tofu into the egg, then dust heavily with the cornstarch, and carefully place 5-6 pieces in the oil at a time--you don't want to change the temp of the oil too drastically by putting in too many, and you don't want them to stick together by crowding them.
- Fry until brown and crispy, about 2 minutes, depending.
- Drain in a colander.
- Repeat process until done.
- This can be done a couple of hours in advance, but don't seal the container while hot, because they'll get soggy.
- I just cover with a paper towel.
- Now, for the sauce, mix the rice wine, sugar, soy sauce, cornstarch (2tsp)--I usually shake them together in a jar) Feel free to double sauce to taste--it works fine.
- Add a tbsp oil to a skillet, heat, and stir fry the garlic until aromatic, but not burned.
- Toss tofu in the oil, stir around to heat and crisp a little more, then add the sauce mixture into the pan, and stir to coat tofu, and let thicken--about 1 minute.
- Serve hot, over rice, preferably.
