Steps:
- Preheat the oven to 450 degrees F.
- Add the tomatoes to a shallow 2-quart casserole dish in a single layer.
- Toss the tomatoes with the oil, and salt and pepper, to taste. Make sure the tomatoes are cut side up after tossing. Roast until the tomatoes are extremely tender, about 35 to 40 minutes. Remove them from the oven and keep warm.
- In a large salad bowl, toss the arugula, mozzarella balls, basil and the warm tomatoes along with any juices from the dish. Drizzle with some good balsamic and season with salt and pepper, to taste.

- Preheat the oven to 400º F. Soak the corn in the sink or a bowl filled with cold water for 10 to 15 minutes. Place on a baking sheet with sides and roast for 20 to 25 minutes, until the kernels are tender. Cool to room temperature, then pull off and discard the husks and silks. Cut the kernels off the cob into a large bowl.
- Add the mozzarella, avocados, tomatoes, basil, salt and pepper to the bowl with the corn. Drizzle 1⁄2 cup of the vinaigrette over the salad and toss gently. Be careful not to over-mix or mash the avocado. Season with more salt, pepper or vinaigrette to taste. Serve on a bed of the arugula or baby greens.

- Take the skin off the tomatoes - a huge difference. If the skin is tough to come off, I cut the skin slightly and pour hot water over them and keep the tomatoes covered for a couple of minutes.
- Slice or cut the tomatoes in as big pieces as you like them.
- Cut the mozarella into small cubes (1/4 inch).
- Mix the tomatoes, mozarella, basill and season it with salt and pepper.
