Tomato, pepper & bean one pot image

Steps:

  • Heat the oil in a large pan or casserole on a medium heat. Fry the onion, celery and carrots for 10 mins until soft and golden, then add the peppers and fry for another 5 mins.
  • Stir in the garlic for a minute, then add the tomato purée, all the beans and chopped tomatoes, then swirl out the tomato cans with a splash of water and add to the pan with the stock cube, bay leaves, sugar and vinegar. Season and simmer, uncovered, for 25 mins until the sauce reduces to coat the beans and the peppers are soft. Leave to cool before storing in transportable containers. Will keep in the fridge for 3 - 4 days or freeze in portions and defrost in the fridge overnight. Choose your toppingsSweet & spicyAdd diced dried apricots and 1 tbsp harissa. Top with yogurt swirled with more harissa, and toasted flaked almonds. Tex-MexStir in ½ - 1 tbsp chipotle paste, shredded leftover roast chicken if you have any, and top with diced avocado, grated cheddar and coriander. Smoky BBQ beansStir in 1 tbsp smoky BBQ sauce and crumble over shop-bought crispy bacon, a dollop of soured cream or yogurt, and some chopped herbs. TOMATO SAUCE IN CROCK POT

This recipe was created as part of the ZWT 8 Crock Pot challenge where you had to convert a recipe into a recipe cooked in a crock pot. The original recipe was posted by Magpie Diner - recipe #483372. The orignal recipe called for 1/3 cup of olive oil which I reduced to 1 tbsp as well as fresh thyme and marjoram, which I switched to chives and parsley. I used roma tomatoes and blended the sauce for a consistent texture

Tomato Sauce in Crock Pot image

Steps:

  • Heat olive oil in pan and saute onions until translucent, about 7 minutes.
  • Add garlic and saute for another 2 minutes.
  • Add the onion/garlic mixture into crock pot along with bay leaves, tomatoes, salt and peper to taste.
  • Cook in crock pot on high for 90 min and reduce to low for 30 minute.
  • Remove bay leaves.
  • Blend tomatoes with hand blender - this step is optional, if you like a chunky sauce
  • Add fresh herbs of your liking and stir in tomato paste.

"Found em!" I shouted to anyone that might be hovering near the country road mile we live on. A light rain shower just started, and there I was standing in the garden hunting down the last tomato that might be hiding. I found a couple of tomatoes nestled down beneath the sweet potato vines, large pepper plants leaves, and the numerous weeds that had continued to sprout even in the cool Fall weather. Mud was already caked to my old garden crocs, and my hands were also full of mud. Dexter the Mastiff sat quietly beside me, and was trying to stare down a brown caterpillar that was making it's way slowly across the earth. I turned, quickened my step down the dirt road with the dog beside me, carrying a half of dozen various sized tomatoes tettering in my arms and trying not to drop any along the road to home. I really wanted some tomato soup, and I just knew it would warm me up and Dex too. This recipe uses canned tomatoes, or you can use fresh ones too, like I did. I just peeled the tomatoes, put em' in the pot and went right along with the recipe from there. This recipe was loosely adapted from Cooks Illustrated.

Tomato Soup image

Steps:

  • Heat 2 tablespoons oil in a soup pot, warmed over medium-high heat.
  • Add onion, bay leaf, and garlic.
  • Soften vegetables for 3 minutes.
  • Add tomatoes and their juice, and broth.
  • Mash up tomatoes with spoon of potato masher.
  • Stir in torn bread.
  • Add the Italian seasoning or oregano.
  • Bring to just below a boil, reduce heat to med/low and cook till warmed, (not boiling).
  • Add salt and pepper to taste.
  • Remove bay leaf.
  • Carefully scoop 3/4 cup tomato mixer out and run through a blender for a couple of seconds until mixed. Put pulsed tomato mixture in a bowl until all the tomato mixture is pulsed. (or use a hand mixer in pot).
  • Warm again to piping hot in soup pot, dish into a cup to carry around with you, or in a soup bowl. Add toppings as desired. Drizzle with oil as desired.
