- Heat medium soup pot over medium-high heat. Add the olive oil and sausage and brown. Add veggies, bay leaf and beans. Season with salt and pepper. Cook mixture 5 minutes to begin to soften the vegetables. Add rabe and wilt. Add stock and cover pot. Raise heat and bring soup to a boil. Reduce heat to simmer and cook 15 minutes. Adjust seasonings and serve soup with grated cheese, for topping.

- Bring a large pot of salted water to a boil. Heat 1 tablespoon butter in a large skillet over medium. Add broccoli and garlic; season with salt and pepper. Cook, tossing occasionally, until broccoli is crisp-tender, 6 to 8 minutes (if skillet gets too dry, add a little water).
- Cook tortellini in boiling water until al dente. Drain, reserving 1/2 cup pasta water; return tortellini to pot. Add broccoli mixture, tomatoes, and remaining 2 tablespoons butter; season with salt and pepper, and toss gently to combine. Gradually, add enough reserved pasta water to create a sauce that lightly coats tortellini. Serve immediately.

- Thinly slice the garlic clove lengthwise, then cut the slices in slivers.
- Combine the broth with the garlic in a small saucepan.
- Over high heat, bring to a boil. Reduce the heat to medium and simmer 5 minutes.
- Add the tortellini, broccoli and carrot, and cook a few minutes longer, until the vegetables are tender.
- Season to taste with salt and pepper. Sprinkle with cheese if you like.

- Bring a large pot of boiling water to a boil; cook broccoli rabe in water for 1 minute. With tongs, transfer broccoli rabe to a colander, rinse under cold water, and pat dry.
- Add tortellini to the boiling water and cook according to package directions.
- Meanwhile, in a large skillet, heat oil over medium-high heat. Add garlic and cook for 1 minute. Stir in broccoli rabe and crushed red pepper. Season with salt and cook for 1 minute. Stir in butter and sun-dried tomatoes and cook for 1 minute more.

- Preheat oven to 350 degrees.
- Wash broccoli and cut into bite size pieces.
- Cook broccoli in boiling water for 4 to 5 minutes and drain.
- Cook tortellini according to package directions and drain.
- Mix broccoli and tortellini together and set aside.
- In a medium size pan heat butter until melted.
- Stir in flour salt and pepper.
- Mix chicken broth and milk together and add slowly to flour/butter mixture.

- Cook tortellini in a large pot of boiling water until tender but firm (about 5 min).
- Add broccoli and cook until tender (about 3 min).
- Drain.

- Place the yogurt in a sieve lined with a paper towel. Set aside until all of the liquid has drained off, several hours or overnight in the refrigerator.
- Melt the butter in a large pot over medium heat. Add the onion and cook until soft, about 5 minutes. Add the broccoli stalks and florets and 3 cups of the chicken broth and bring to a boil. Reduce to a simmer, cover and cook until the broccoli is soft, about 20 minutes.
- Place half of the broccoli and cooking liquid with half of the yogurt in a blender. Hold the top down firmly with a kitchen towel and blend until coarsely pureed. Scrape the mixture into a large saucepan and repeat with the remaining broccoli, cooking liquid and yogurt. Stir in the remaining 1/2 cup chicken broth, the salt, pepper and cayenne. Warm the soup over low heat.
- Separate the broccoli rabe stems from the leaves. Cut the stems into 1/2-inch pieces and cut the leaves across into thin strips. Bring a medium-size pot of lightly salted water to a boil. Add the stems and blanch for 2 minutes. Remove with a slotted spoon. Add the leaves and blanch for 1 minute. Drain. Divide the soup among 4 bowls. Top with the broccoli rabe stems and then the leaves and serve immediately.
