Steps:
- Saute celery, onion, carrots and garlic in oil.

- Remove bay leaf and serve.
TORTELLINI SOUP
It's a wonderful comfort food. Friends and family always rave about this soup and want the recipe. Tastes even better after warming up the leftovers. This is a family favorite I got from my Mother-in-law. I use the dry packaged tortellini. If you're a garlic lover, don't be afraid to add more. If you're a spinach lover add more to the leftovers when warming over. When serving the soup sprinkle desired amount of parmesean cheese on top of individual portion and stir in.

Steps:
- Heat olive olive over medium heat.
- Saute garlic and onion 10 - 15 minutes.
- Add chicken broth and italian herbs. Bring to a boil.
- Stir in tortellini, then simmer 10 - 12 minutes.
- Stir in tomatoes, simmer 5 minutes.
- Add spinach, cook 3 minutes.
- Salt & pepper to taste.
- Season with parmesean cheese on serving portion.

CREAMY TORTELLINI SOUP

- Bring the broth to a gentle boil in a medium pot over medium-high heat.
- Add the frozen vegetables to the pot and return to a gentle boil. Add the tortellini and cook until almost tender, 3 to 5 minutes. Add the heavy cream and cook for another 2 minutes. Taste and adjust the seasoning.
- Ladle into bowls and top with the shaved Parmesan and croutons. Drizzle with olive oil.
TORTELLINI SOUP
Steps:
- In a large stockpot over medium heat, heat the oil until it shimmers, about 2 minutes, then add the onion, garlic, and carrots, and saute for 5 minutes or until the vegetables are slightly soft. Pour in the chicken stock, increase the heat to high, and bring to a boil. Add the peas, tortellini, and corn and cook for 12 minutes, or according to the package directions for the tortellini.
- Remove the stockpot from the heat and add the spinach, stirring until it wilts. To serve, spoon the soup into bowls and top with grated Parmesan cheese.
TORTELLINI TOMATO SPINACH SOUP

- In a 3-quart soup pot, heat olive oil over medium high heat. Saute the onion and garlic, stirring often until onions are translucent, about 5 to 7 minutes. Add broth and tomatoes, turn heat up to high, and bring to a boil. Add the tortellini and cook according to package instructions. When tortellini is almost done, add spinach and taste, adjusting seasonings with salt and pepper. Serve immediately. Garnish each serving with a sprinkling of Parmesan.
QUICK CHICKEN TORTELLINI SOUP

- Heat a heavy-bottomed Dutch oven or soup pot to medium heat and add the oil. Put the chicken wings and breasts in skin-side down and cook without moving until golden brown, 6 to 8 minutes. Set aside the chicken.
- Add the carrots, celery and shallots. Saute until the shallots are translucent, about 10 minutes, stirring all the while. Deglaze with the dry sherry and scrape up any bits off the bottom. Add the stock, fresh thyme and bay leaf, return the chicken to the pot and bring to a low simmer; simmer until the chicken is cooked through, about 20 minutes. Set aside the chicken to cool on a plate.
- Meanwhile, bring a large pot of salted water to a boil.
- Shred the chicken breasts and whatever can be salvaged from the wings and pour any reserved juices back into the soup pot. Add in the chicken and adjust the seasoning if necessary. Just before serving, add in the lemon zest and juice to taste.
- Cook the tortellini in the salted water just until al dente.
- Put some tortellini in each individual bowl, then ladle the soup over. Serve immediately to retain the al dente quality of the tortellini. Garnish with a wedge of lemon and fresh parsley.
SPINACH TORTELLINI SOUP

- In a large pan cook sausage with onions, carrot and celery until sausage is browned. Season with garlic salt and black pepper. Add garlic and zucchini and cook for another few minutes.

- Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. - Remove casings from sausage. Brown sausage and cook until crumbly. Remove meat from pot. Reserve 1 tablespoon drippings.

- Place the sausage in a large pot over medium high heat and saute for 10 minutes, or until well browned. Drain the fat except for about 1 tablespoon, add the onions and garlic and saute for 5 more minutes.
- Next add the beef stock, water, wine, tomatoes, carrots, basil, oregano and tomato sauce. Bring to a boil, reduce heat to low and simmer for 30 minutes, skimming any fat that may surface.
