Steps:

  • Heat water in a double boiler to a low simmer. Add Coconutmilk Creamer, Culinary Coconutmilk and organic brown cane sugar to the double boiler bowl. Whisk occasionally until sugar is melted and mixture is very warm but not hot.
  • Drop in chocolate and whisk until fully incorporated. Remove bowl from double boiler and stir in coffee. Use immediately or refrigerate.
  • To make Vegan Irish Coffee, combine Vegan Irish Cream and whiskey in a jar and give it a shake. Pour 4 to 5 ounces into an ice filled glass (coffee cubes if you have them!). Dust with cocoa powder.
  • Smack a mint sprig to release its oil and lay on top of the drink.

TRADITIONAL IRISH COFFEE

In 1942, a man named Joe Sheridan invented Irish coffee at his restaurant at Foynes Airport, near today's Shannon Airport. The drink was created to relieve the Irish damp chill for passengers flying to the United States. Stanton Delaplane, a writer for the San Francisco Chronicle, tried Irish coffee at Shannon shortly after the war. He enjoyed it so much that he brought the recipe home. The first Irish coffee in the United States was served at Buena Vista Cafe on November 10, 1952. Soon after, more Irish coffee was being consumed in San Francisco than Ireland. This drink might be responsible for single-handedly saving Irish whiskey. Irish coffee consists of coffee, sugar, Irish whiskey, and soft whipped cream. The drink traditionally does not have a maraschino cherry or green creme de menthe on top.

  • Coddle. Back in the day, Catholics couldn’t to eat meat on Fridays. So, coddle—a layered, slowly braised dish of pork sausage, potatoes, onion and rashers (aka Irish-style back bacon)—was eaten on Thursdays in Ireland.
  • Boiled Cabbage. Like potatoes, cabbage is one of Ireland’s most beloved crops due to its cost efficiency. Though you’ve likely noshed on it alongside a few slabs of corned beef, cabbage was traditionally boiled in one pot with Irish bacon, then shredded and served with butter.
  • Barmbrack. Did you know Halloween has its roots in Ireland? It started with the ancient Celtic harvest celebration Samhain, which was marked by feasts and the opening of ancient burial mounds, which were believed to be passageways to the other side.
  • Champ. Speaking of Samhain, this mashed potato dish was a must at nighttime celebrations. Champ is very similar to colcannon, except it’s made with chopped scallions instead of kale or cabbage.
