Steps:
- Melt chocolate in double boiler over medium heat on stove top. Using tongs, or your fingers, quickly dip pretzels in chocolate allowing the excess to run off. Place dipped pretzels on waxed paper lined cookie sheets. Sprinkle with chopped nuts, colored sugars or other toppings. Allow to harden. You may need to refrigerate for a while to help this along. Once hardened, remove from sheets and store in a cool location, with waxed paper between layers.
- Tip: Package pretzels in clear cellophane bags or in vase for festive gift giving!

- In a microwave safe bowl, break up the chocolate bars into small pieces so they melt easily. Microwave on high for 30 seconds. Remove and stir for about a minute. The chocolate will continue to melt as you stir. If needed, microwave in 10 second increments until all is melted and smooth.
- Take a pretzel and dip into chocolate, using a spoon to evenly cover 1/2 of the pretzel. Shake the pretzel a bit to remove any excess chocolate. Immediately cover the chocolate with sprinkles before the chocolate hardens. I usually do this over a paper plate, to catch the sprinkles that miss the pretzel.
- Place each pretzel on parchment paper lined baking sheet and refrigerate for about 10 minutes for the chocolate to harden. Once chocolate is set, cover tightly and store in the refrigerator for up to 1 week.

- Warm the milk and butter in the microwave until the butter is just melted, about 90 seconds; do not boil. (Alternatively, warm the butter and milk in a small saucepan.) Add the brown sugar and stir until dissolved; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine 2-1/2 cups of the flour with the yeast and salt. Mix on low speed until well combined, about 1 minute. With the mixer on low, gradually add the warm milk mixture to the bowl. When the dough forms a cohesive mass, switch to the dough hook. Knead, adding more flour as needed, until the dough is smooth but still slightly tacky, about 5 minutes. (Alternatively, the dough can be mixed and kneaded by hand.) Shape the dough into a ball, place in a clean, lightly greased bowl, and cover with plastic wrap. Let rise in a warm spot until doubled in size, 1 to 2 hours.
- Preheat the oven to 450°F. Line a large baking sheet with parchment paper and spray lightly with nonstick cooking spray.
- In a 2-qt baking dish, combine the baking soda with 2-1/4 cups warm water. Stir until the baking soda is dissolved; set aside. (Dipping the pretzel dough in a baking soda solution gives the pretzels a nice golden brown crust.)

- Once caramel has cooled, hold each pretzel rod by one end and dip the pretzel into the caramel, swirling it around to get it coated well. Shake of any excess caramel. Immediately sprinkle toppings onto pretzel, twirling the pretzel to get all sides covered. Do this over a plate to catch any extras.
