- Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
- Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

- Mix rice, onion, Cheddar cheese, egg, garlic, salt, red pepper flakes, black pepper, parsley, and onion powder by hand in a bowl.
- Cover bowl with plastic wrap and refrigerate at least 30 minutes.
- From rice mixture into 4 small patties.
- Heat vegetable oil in a large skillet over medium-high heat. Fry patties in hot oil until lightly browned, about 5 minutes per side.

TUNA FISH PATTIES
This is a great recipe I came up with to get rid of leftover bread. I generally use the contents of my vegetable drawer here so I kind of throw in whatever I have at the time, so you can use your own judgment. They taste really nice when eaten with sour cream or low-fat mayo or even on their own - though my husband prefers ketchup. I generally use this recipe as a guideline, so have fun with it!

- Soak bread in water in a large shallow dish until softened completely; remove from dish and squeeze as much water from bread as possible.
- Heat 1 tablespoon olive oil in a non-stick skillet over medium heat; cook and stir onion, spinach, and garlic in the hot oil until the onion softens, about 5 minutes.
- Mix the onion mixture with softened bread, tuna, mushrooms, zucchini, celery, eggs, dill, salt, pepper, basil, and oregano in a large bowl until combined. Form the mixture into about 24 thin, palm-size patties.
- Heat 1 tablespoon olive oil in a large skillet over medium heat; cook the patties in the skillet until cooked through, 2 to 3 minutes per side.

TRACEY'S TASTY TUNA PATTIES
I got this recipe from my great grandmother and I have added to it throughout the years I have been making them. They are awesome for a meal and the family loves them. It's a definite comfort food that kids can eat with their fingers when cold - a great idea to get fish into a child's diet.

- Take can of corn, flaked tuna, mashed potato, cooked rice, 1 egg, garlic, salt, pepper, herbs, onion and cheese and mix them together in a large bowl.
- Heat cooking oil in a frying pan on stove top.
- Take mixture and roll into golf ball sized balls.
- Put plain flour into a bowl, mix beaten egg, 1/4 cup of milk, 1/4 teaspoon of salt and 1/4 teaspoon of pepper together, then put into a bowl, put breadcrumbs into a bowl.
- Take balls of mixture and drop them into the bowl of plain flour, then put them into the bowl of egg mixture, then coat them in the the bowl of breadcrumbs.
- Do about 6-7 balls at a time. Put them in the heated oil pan, pressing them down to make into patties at the same time.
- Cook for about 10 - 12 minutes or until they are golden brown, then turn them over and cook the other side until they are golden brown.
- Take them out and place them on paper towels to drain the excess oil off of them.
- Repeat steps until all of the mixture is used up.
- You can serve them hot or cold with salad or with chips or even steamed vegetables.
- If you are not into really fried crispy patties, you could skip instructions 4-6 and just take the plain mixture and make them into balls.
- Spray your frying pan with cooking spray and then put mixture balls into the pan.
- Press them down to make them patties. cook until they are golden brown. (around 10-15 minutes each side)
- I have cooked these patties both ways and they are so delicious.

- Combine the corn starch and milk in a small saucepan, stir until smooth.
- Add the 4 tablespoons butter.
- Simmer over medium heat for 1 minute stirring constantly with a wire whisk.
- Continue simmering until the sauce thickens stirring constantly.
- Add salt and pepper if necessary.
- In another saucpan, boil the water and 1/2 tablespoon butter.
- Add the rice.
- Simmer, covered, over very low heat about 15 minutes.
- Thoroughly mix the rice, tuna & 1/2 of the white sauce.
- Preheat oven to 350 degrees.
- Form patties on a foil lined cookie sheet. (You may want to very lightly spray the foil with non-stick cooking spray to prevent sticking.)
- Bake 10-15 minutes.
- Top the patties with the remaining white sauce.
- Sprinkle with salt and pepper, if desired.
