Steps:

  • For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, lemon juice and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld.
  • For the burgers: Preheat the grill to high. Form the meat into four 6-ounce burgers. If you are not going to cook right away, keep the burgers cold in the refrigerator. Sprinkle the burgers on both sides with salt and pepper. Grill until cooked through, 3 to 4 minutes on each side. During the last minutes of cooking, add 2 slices of cheese to each burger, cover the grill and let the cheese soften slightly, about 1 minute. Put the burgers on the buns, drizzle with some of the Meyer lemon-honey mustard and top with a few sprigs of watercress. Serve with extra mustard on the side.

A1 Turkey Burger With Caramelized Onions and Goat Cheese #A1 image

Steps:

  • Slice onions and sauté in olive oil over medium high heat until they start to become translucent. Add 2 T brown sugar, 2 T A1 and 2 T water. Cover and lower heat to just simmer.
  • Mix ground turkey with 2 T A1, 2 T mayo and salt and pepper and then form into 4 patties. This mixture will be very moist - don't worry.
  • Spray a medium size skillet with cooking spray and heat over medium high heat. Add turkey patties and cook for 5-7 minutes on the first side.
  • While the burgers are cooking mix together the basting sauce by mixing 2 T A1, 2 T brown sugar and 1 T water and microwave for 1 minute just to combine. Take the cover off of the onion mixture and turn to very low heat.
  • Flip the burgers and baste with the basting sauce. Cook for another 5-7 minutes and flip again, basting again.
  • Assemble burgers (on buns or no) by placing goat cheese on top of the burger and then the caramelized onions on top of the goat cheese.

Goat Cheese-Stuffed Turkey Burgers with Roasted Red Pepper Relish image

Steps:

  • For Burgers:
  • Combine turkey, breadcrumbs, lemon juice, lemon peel, thyme, salt and pepper in large bowl. Mix well. Divide turkey mixture into 6 equal portions. Form 1 portion into two 4-inch diameter patties. Place 1 tablespoon goat cheese atop 1 turkey patty; place second patty atop cheese. Seal patties at edges to enclose cheese. Repeat with remaining 5 portions. (Can be prepared 4 hours ahead. Cover and refrigerate.)
  • Prepare barbecue (medium-high heat). Grill burgers until cooked through, about 5 minutes per side. Grill hamburger buns, cut side down, until lightly toasted, about 1 minute. Place turkey burgers on bottom half of buns. Top burgers with Roasted Red Pepper Relish, then bun tops and serve.
  • For Relish:
  • Heat oil in heavy large skillet over medium-high heat. Add red peppers and sauté 2 minutes. Add onions and garlic. Cook until onions are tender, stirring frequently, about 5 minutes.
  • Mix vinegar and sugar in small bowl until sugar dissolves. Stir vinegar mixture into red peppers. Mix in mustard and cayenne pepper. Season with salt. Continue cooking relish until all liquid has evaporated, stirring frequently, about 6 minutes. Cool to room temperature. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using.) Makes about 2 cups.

  • To a medium-large bowl, add turkey, bread crumbs, whisked egg (just whisk a large egg in a small bowl until well combined, then measure out 2 tablespoons to add to turkey), lemon juice, lemon zest, rosemary, thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix well. I like to just use my hands, for quickest and best overall mixing of ingredients.
  • Divide mixture into six equal portions, and then divide each of those portions in half, to equal twelve portions. Form each portion into a 4" patty and place on a wax paper-lined rimmed pan.
  • Place goat cheese on centers of six turkey patties, a strong 1/2-tablespoon of goat cheese each. I like to use a small (4-oz. size) goat cheese log and slice off coin-shaped pieces that equal a bit more than 1/2 tablespoon of goat cheese. Place a bare turkey patty on top of each patty with goat cheese, and then pinch edges together to seal patties and enclose cheese. Sprinkle a bit more kosher salt and black pepper over tops of finished burgers. Cover and refrigerate for 30 minutes.
  • Preheat grill to medium/medium-high heat, and then oil cleaned grates. If you have a griddle for your grill, that works great. Or heat a large griddle over medium/medium-high heat on the stovetop. Turkey burgers are generally more loose than beef burgers, but the breadcrumbs, eggs, and refrigerator chilling helps to keep these burgers together. If you have any issues keeping these together, stick to using a griddle on the grill or stovetop. Place burgers on hot griddle or oiled grill grates and let cook for 5 minutes without moving. Gently flip burgers over and cook for 5 to 7 minutes more, or until burgers are cooked through to an internal temperature of 165° F.
