Steps:
- Place broccoli in a saucepan with 4 cups of water. Bring to a boil; reduce heat, cover, and simmer until tender, 5 to 8 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Melt margarine in a saucepan over medium heat; stir in flour, salt, and pepper and mix well. Pour in chicken broth; cook and stir until sauce thickens and bubbles, about 10 minutes. Add cream and wine; stir until well-combined.
- Arrange broccoli on the bottom of a 7x12-inch baking dish. Pour half of the sauce over the broccoli. Top sauce with sliced turkey. Stir Monterey Jack cheese into the remaining sauce in the saucepan. Pour cheese sauce over the turkey.
- Bake the turkey divan in the preheated oven until bubbly, about 20 minutes. Broil until the cheese sauce is golden, about 5 minutes.

TURKEY DIVAN OMELET
This is an open faced omelet that makes perfect use of leftover brocolli and/or turkey. It is wonderful for Sunday brunch or for a light dinner.

Steps:
- Spray a 10-9nch skillet with cooking spray and heat over medium heat.
- Add the diced turkey and sliced green onions, sauté for 2 to 3 minutes or until turkey is warmed and onions wilted.
- Beat the eggs or egg substitute with the milk, salt and pepper; pour over the turkey and cook until almost set, lifting the edges to allow uncooked portion to run to the bottom.
- Warm the chopped broccoli in the microwave and sprinkle over the egg mixture.
- Top with grated cheese and cover the skillet with a lid and allow omelet to rest in the pan for 2 to 3 minutes.
- Slide the omelet onto a plate and cut into wedges.
- Serve hot with fresh biscuits.

I got this recipe from Recipes from Miss Daisy cookbook. It's a good way to use leftover turkey. I usually use chicken when I make this dish.

Steps:
- Cook broccoli according to package directions being sure not to overcook; drain.
- In a 9x13 dish put a layer of broccoli and turkey.
- To prepare sauce mix remaining ingredients except bread crumbs and butter.
- Pour sauce on the turkey and broccoli.
- Top with bread crumbs and butter.
- Bake 350 degrees for 25-30 minutes.

THANKSGIVING LEFTOVER TURKEY DIVAN
We make this every November using some of the leftover turkey from Thanksgiving! It's as traditional as the roasted bird & mashed potatoes!

- Preheat oven to 350; grease a 13x9 pan.
- Peel broccoli stems, cut into bite-size morsels; cut tops into bite-size pieces also.
- In a medium saucepan with about a half-inch of water, steam-parboil broccoli in boiling water--just until broccoli is barely BRIGHT green; drain well, then pour into prepared pan.
- Arrange the cut-up turkey (or chicken) over the broccoli.
- In a small bowl, combine soup, mayo and oregano; spoon over turkey.
- Sprinkle cheese over the pan.
- Bake for 45 minutes and cheese is bubbly.

- In a large nonstick skillet, cook sausage, peppers, apple, celery, green onions, 1/4 teaspoon salt and 1/8 teaspoon pepper over medium heat 4-6 minutes or until sausage is no longer pink and vegetables and apple are tender, breaking up sausage into crumbles. Remove from pan., In a small bowl, whisk eggs and remaining salt and pepper. In the same pan, heat 1-1/2 teaspoon oil over medium-high heat. Pour in half of egg mixture. Mixture should set immediately at edges. As eggs set, push cooked portions toward the center, letting uncooked eggs flow underneath. - Heat 1 tablespoon of olive oil and butter in a skillet over medium-low heat, and stir in the shiitake mushroom, shallot, salt, red pepper flakes, and sage. Cook and stir until the shallot is translucent, about 5 minutes. Mix in the turkey and vermouth, and stir for a minute or two just to heat; remove from heat.
- Beat the eggs with a fork in a bowl until well blended, and season with a pinch of salt and white pepper. Heat 2 teaspoons of olive oil in an omelette pan over medium heat until hot, and pour the beaten eggs into the pan. Use a spatula to gently stir the eggs just until they begin to set, 1 to 2 minutes; shake the pan to cover the bottom completely with egg. Smooth out the top of the partially set eggs with the spatula, cook just until the bottom is firm and the top is still slightly soft, and turn off the heat.
- Spoon turkey filling into the center of the omelette, filling about the middle third of the omelette; dot with small dollops of creme fraiche. Do not overfill omelet. With spatula, fold the upper third of the egg over the filling, and gently tip the skillet and shake the omelette towards the edge of the skillet. With spatula, fold the omelet over one more time, forming a loose cigar shape, and gently tip the omelet onto a serving plate.
