TURKEY FETTUCCINE SKILLET

I came up with this simple dish as a way to use leftover turkey after Thanksgiving and Christmas dinners. My children really enjoy it. -Kari Johnston, Marwayne, Alberta

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large ovenproof skillet coated with cooking spray, saute the onion, celery and garlic in oil for 3 minutes. Add mushrooms; cook and stir until vegetables are tender. Stir in the milk, seasoning blend and salt. Bring to a boil. , Combine cornstarch and half-and-half until smooth; stir into skillet. Cook and stir for 2 minutes or until thickened and bubbly. Stir in Parmesan cheese just until melted. , Stir in turkey. Drain fettuccine; add to turkey mixture. Heat through. Sprinkle with mozzarella cheese. Broil 4-6 in. from the heat for 2-3 minutes or until cheese is melted.

  • Cook fettucini as directed- drain.
  • Saute mushrooms in butter.
  • Stir in flour.
  • Add chicken broth stir until thickened.
  • Add half/half, cheese, and seasonings- stirring constantly.
  • Add meat and fettucini, olives and mushrooms- tossing to coat well.
  • Place in 9x13 buttered casserole and bake at 350 for 30-35 minutes.

This casserole is so good and everyone likes it, even the leftover casserole. It has both meat and vegetable, and can be used as a one dish meal. Just wanted to share if you want a different dish made from leftover turkey or chicken.

Steps:

  • Melt butter, add flour stirring constantly. Add milk and chicken broth. Continue stirring and cook until thickened. Add remaining ingredients, except cheese. Put ingredients in a buttered casserole dish and top with cheese. Bake 25-30 minutes at 300 degree. (you may have to bake longer depending on oven)
