Steps:

  • Heat oven to 350°F. Spray 2 1/2-quart casserole with nonstick cooking spray. Cook macaroni to desired doneness as directed on package. Drain.
  • In large nonstick skillet, cook and stir turkey and garlich-pepper blend over medium-high heat for 6 to 8 minutes or until turkey is no longer pink.
  • Add cooked macaroni, zucchini, basil and Alfredo sauce; mix well. Spoon mixture into sprayed casserole. In small bowl, combine all topping ingredients; mix well. Sprinkle over casserole.
  • Bake at 350°F. for 30 to 40 minutes or until thoroughly heated.

There are two things that make for a great Thanksgiving leftovers recipe. The first one is, it shouldn't remind you of the original meal. Plus, and just as important, it should be super easy and simple to make. Not only does this turkey chili mac satisfy those two requirements, it also happens to be incredibly delicious and pretty nice to look at. Turkey Chili Mac image

Steps:

  • Heat olive oil in a pot over medium-high heat. Add onion and 1 teaspoon salt; cook, stirring, until it starts to soften and turns translucent, about 5 minutes.
  • While onion cooks, make the spice mixture by combining chili powder, chipotle pepper, cumin, black pepper, cocoa, cinnamon, and oregano in a small bowl.
  • Add garlic and the spice mixture to the onion and cook, stirring, 1 to 2 minutes.
  • Stir in 4 cups chicken broth, diced tomatoes with chiles, and tomato sauce. Raise the heat to high and bring to a simmer. Reduce the heat to medium-low and simmer, stirring occasionally, for 15 minutes.
  • Add the leftover turkey meat along with additional chicken broth if needed, and cook, stirring occasionally, for another 15 minutes.
  • Taste for salt and other seasonings and adjust as needed. Raise the heat to high and bring to a boil. Stir in pinto beans and elbow macaroni and cover tightly with a lid. Cook, covered, until the pasta is just barely tender, about 5 minutes.
  • Turn off the heat, remove the lid, and stir very well. Cover back up and let sit with the heat off for 5 minutes. Uncover, stir in Cheddar cheese, and serve immediately.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 8x8-inch casserole dish with cooking spray.
  • Melt butter in a skillet over medium-high heat. Add carrots, celery, and onion and saute until softened, about 5 minutes. Add cubed turkey, stuffing, turkey broth, salt, pepper, garlic, and thyme. Stir to combine and transfer into the prepared casserole dish.
  • Melt 1 tablespoon butter in a saucepan over medium-high heat for the sauce. Stir in flour and mix until a paste forms. Pour in 1 cup turkey broth and season with salt, thyme, onion, garlic, pepper, and poultry seasoning. Stir to combine and pour over the turkey mixture.

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the shell pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 13 minutes. Drain well in a colander set in the sink.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and green pepper until browned. Drain off excess grease.   • Preheat oven to 350 degrees F.
  • Brown ground turkey in a large skillet over medium-high heat; set aside.
  • Cook macaroni and cheese according to directions on package.

  • Bring a pot of water to boil for pasta. When it comes to a boil, add pasta and salt to season the cooking water. Cook pasta 6 minutes to al dente.
  • While water comes to a boil and pasta cooks, heat a deep skillet over medium high heat. Add extra-virgin olive oil then butter then ground meat. Break up meat and crumble, 2 to 3 minutes. Add garlic, onions, red bell peppers and seasonings to the turkey. Cook 5 or 6 minutes then add chicken stock and sour cream to the pan. Bring to a bubble and reduce heat to low. Add cooked pasta and stir. Let pasta absorb some sauce, a minute or so. Adjust seasonings and serve. Garnish the prepared dish with chopped parsley and dill.

MAC AND CHEESE WITH GROUND TURKEY CASSEROLE

This was a total experiment. For my first try it actually didn't come out too bad. It was a little dry so I think for next time I will omit one egg, add more milk (or even some fat free half and half), and not sure if I want to add the ricotta again. The recipe you see below though is exactly the amounts that I used. Try it and play around with the ingredients as much as you like. I found this recipe on Johanna's Recipe Blogg. I have not tried this recipe, but I'm posting it for safe keeping.

Mac and Cheese With Ground Turkey Casserole image

Steps:

  • Preheat the oven to 350° F.
  • Grease a 13x9 casserole dish, and set aside.
  • In a large saute pan brown ground turkey. Once completely brown add packet of the Lipton onion soup mix. (may add more salt and pepper to your liking) Set aside and let cool.
  • Mix ricotta, 1 egg, 1/2 tsp salt, and 1/2 pepper.
  • Whisk together the remaining eggs, milk, salt, and paprika in a bowl.
  • Add a little bit of of ground turkey mixture to ricotta to temper eggs. Once done add ricotta mixture to the ground turkey mixture and mix completely.
  • Mix cooked macaroni and ground turkey mixture together.
  • Layer the cooked macaroni mixture with 1 1/2 cups of the cheese in the casserole dish. Pour milk, egg and spice mixture over everything. Top with the remaining cheese, and sprinkle a liberal amount of Parmesan cheese and add a little sprinkle of breadcrumbs.
  • Bake it for 40 to 45 minutes or until the mixture is set in the middle.
  • This is the finished product. Yum!

  • Meanwhile, cook turkey with peppers in large nonstick skillet on medium heat until done, stirring frequently. Remove from heat. Stir in pasta sauce.
  • Add 1/2 cup shredded cheese and 1 Tbsp. Parmesan to prepared Dinner; mix lightly.
  • Spoon into 8-inch square baking dish sprayed with cooking spray; top with turkey mixture and remaining cheeses.
  • Bake 20 to 25 min. or until heated through.
