AMISH TURKEY CASSEROLE
This casserole is a great way to use up leftover turkey, dressing or stuffing, and dinner rolls. It's even faster to make when using either a blender or food processor to chop the vegetables and make bread crumbs.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease an 8x8-inch casserole dish with cooking spray.
- Melt butter in a skillet over medium-high heat. Add carrots, celery, and onion and saute until softened, about 5 minutes. Add cubed turkey, stuffing, turkey broth, salt, pepper, garlic, and thyme. Stir to combine and transfer into the prepared casserole dish.
- Melt 1 tablespoon butter in a saucepan over medium-high heat for the sauce. Stir in flour and mix until a paste forms. Pour in 1 cup turkey broth and season with salt, thyme, onion, garlic, pepper, and poultry seasoning. Stir to combine and pour over the turkey mixture.
- Bake in the preheated oven, uncovered, for 30 minutes. Remove and top with fresh bread crumbs. Melt remaining butter and drizzle over the bread crumbs.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Broil casserole until bread crumbs are golden and toasted, about 2 minutes. Serve immediately.

- Preheat the oven to 350 degrees F (175 degrees C). Butter a 2 1/2-quart baking dish.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
- At the same time, melt butter in a saucepan over medium heat. Add mushrooms, onion, and garlic; saute until tender, 5 to 7 minutes. Add condensed soup, leftover gravy, milk, curry powder, poultry seasoning, and salt; cook and stir until well blended and hot, about 5 minutes.
- Combine cooked egg noodles, turkey, and peas in the prepared baking dish. Pour hot soup mixture over top and sprinkle with Cheddar cheese.
- Bake in the preheated oven until hot and bubbly, 25 to 30 minutes.

- Set oven to 350 degrees /Grease a 2-quart casserole dish. Combine 2 tbsp melted butter with paprika and add the crushed Rice Krispies; mix and set aside. /Melt 3 tbsp butter in a medium saucepan over low heat. /Whisk in flour, garlic powder (if using) and black pepper and thyme (if using); gradually add half and half cream, whisking constantly until smooth. /Raise heat to medium; cook until bubbly and thickened, stirring constantly Add in shredded cheese and Parmesan cheese, stirring until melted. /Remove from heat; stir in rice, parsley, chopped turkey and peas. /Pour into prepared casserole dish. Sprinkle cereal mix evenly over top. /Bake for 20-25 minutes, or until thoroughly heated and bubbly.

- In a large bowl, combine the turkey, ham and cheese; set aside. In a large saucepan, saute onion in butter until tender. Add flour; stir until blended. Gradually add cream, stirring constantly. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in the dill, mustard and nutmeg. Remove from the heat and pour over meat mixture. , Spoon into a greased 13x9-in. baking dish. - Preheat oven to 350 degrees.
- Spray a 13 x 9 inch baking pan with the cooking spray.
- In a skillet, heat the oil over meidum heat.
- Add the ground turkey,onions,bell peppers and garlic.
- Cook until turkey is browned and vegetables are tender.
- Stir in the tomato paste, crushed tomatoes, salt, basil, oregano and pepper.
- Simmer,covered for 5 minutes.
- Pour the meat; mixture into the prepared baking pan.
- Sprinkle with the shredded cheeses.
- In a small bowl, combine the sour cream and Italian seasoning.
- Break the crescent rolls apart and roll each triangle flat, slightly enlarging.
- Srpead one teaspoon of the sour cream mixture in each triangle.
- Roll up as directed on the package.
- Place on top the cheese.

- In a large skillet, heat butter over medium heat. Add onion and celery; cook and stir 4-5 minutes or until tender. Remove from heat; stir in 1 teaspoon salt, sage, poultry seasoning and pepper.
