TURKEY POTLUCK

The other night, I was low on groceries and was thinking of something to make for dinner. I make a habit of taking left over turkey bones with meat still on them (chicken and pork bones too) and I freeze them to make soup later on. I had a nice smoked turkey with about 1/4 of the turkey meat left on it, so I pulled it out of the freezer and went to town. It turned out great, with a wonderful bold flavor! **Note** Spice Islands Bouquet Garni is a spice blend of 9 spices and is wonderful! Oregano, Summer Savory, Marjoram, Rosemary, Basil, Sage, Thyme, Dill Weed and Tarragon.

Steps:

  • In a large stock pot place your turkey carcass, add your water and all the ingredients EXCEPT arrowroot/cornstarch.
  • Bring to a boil. lower temperature of stove to simmer. Allow to simmer for at least 1 hour (this is a guesstimate on my part).
  • When broth is ready, remove carcass from the pot, be sure to remove all the bones. Set aside and allow to cool a bit. While carcass is cooling prepare biscuits
  • Prepare your favorite biscuit mixture and get biscuits ready for the oven to bake during the final cooking phase. Now that your biscuits are made and ready to be popped in the oven, Take any meat remaining off the carcass. You can pull it off the bones, shred and put back into the pot.
  • Put your biscuits in the oven while you thicken your broth. Put your arrowroot powder or cornstarch into a coffee mug, fill 3/4 with water, stir till all is dissolved. Take broth off the heat and pour into the pot a little at a time. Stirring till it is all thickened. Put back on the heat until it completely thickens to a thick gravy consistency.
  • Serve this scooped over fresh biscuits or you could even serve over egg noodles if you choose. I tend to think that the biscuits would be the best! I wish I thought to take a picture of this when I made it!!!

4-6 cup(s) water
1 large onion, diced
1 cup(s) celery, diced
1/2 cup(s) combination of red, orange and yellow peppers (i use the mini ones)
1-2 cup(s) cabbage, thinly sliced
4 medium carrots, sliced thick
2 medium potatoes, diced
6 medium tomatoes, diced
4 sprig(s) parsley, minced
3 clove(s) garlic, minced
5 large fresh sweet basil leaves, minced
3 medium bay leaves
1 1/2 teaspoon(s) spice islands, bouquet garni spice, rubbed
pinch(es) of additional sage
pinch(es) of additional dill weed
2 teaspoon(s) pepper
- salt to taste
3 - 4 tablespoon(s) arrowroot starch or corn starch
- bisquits

TURKEY POTLUCK CASSEROLE

Just that...great for potlucks, or just for a dinner..this is a wonderful tasting casserole that can be made with left-over cooked chicken if desired instead of turkey (prep time includes cooking the rice)

Steps:

  • Set oven to 350 degrees /Grease a 2-quart casserole dish. Combine 2 tbsp melted butter with paprika and add the crushed Rice Krispies; mix and set aside. /Melt 3 tbsp butter in a medium saucepan over low heat. /Whisk in flour, garlic powder (if using) and black pepper and thyme (if using); gradually add half and half cream, whisking constantly until smooth. /Raise heat to medium; cook until bubbly and thickened, stirring constantly Add in shredded cheese and Parmesan cheese, stirring until melted. /Remove from heat; stir in rice, parsley, chopped turkey and peas. /Pour into prepared casserole dish. Sprinkle cereal mix evenly over top. /Bake for 20-25 minutes, or until thoroughly heated and bubbly.
