Steps:
- Preheat the oven to 400 degrees F.
- Coat the turkey with the olive oil, season with salt and pepper and put into a roasting pan. Transfer to the oven and roast until warmed through. Let cool. Combine the celery, onion, sage leave and thyme in a stockpot and sweat in a little olive oil. Add the bread and the stock and cook for 10 minutes. Remove from the heat and cool. Transfer to a large bowl.
- Heat the oil in a deep-fryer.
- Dice the turkey and add, along with the mashed potatoes, to the stuffing bowl. Form the mixture into medium-sized balls and fry in the deep-fryer until golden brown. Drain on paper towels and serve on a serving platter.

- Preheat oven to 350 degrees F and transfer stuffing into a small baking dish. Place dish in oven and reheat 12 to 15 minutes, until warmed through.
- Heat a pot over moderate heat and add extra-virgin olive oil. Work close to the stove and add vegetables as you chop. If you are using fresh carrots, cut them into a small dice or slice thin. If you are using leftover baby carrots, cut carrots into bite-size pieces. Add celery and onion and lightly season vegetables with salt and pepper. Add bay leaf and stock and bring liquid to a boil by raising heat. Add turkey and reduce heat to simmer. Simmer until any raw vegetables are cooked until tender, about 10 minutes. Stir in the parsley, and peas, if using.
- Remove stuffing from oven. Using an ice cream scoop, place a healthy scoop of stuffing in the center of a soup bowl. Ladle soup around stuffing ball. Your soup will look like a chunky matzo ball soup. Pull spoonfuls of stuffing away as you eat through your bowl of soup.

- In a small bowl mix together the Dijon mustard and honey until well combined.
- Lay a slice of turkey on a plate or cutting board. Spread a 1/2 teaspoon of the honey-mustard mixture widthwise along the turkey about 2 inches from the end of the slice. Place a piece of lettuce on top, then a couple of sticks of cucumber and slices of red pepper. Top with a basil leaf and roll it all up in the turkey slice.
ITALIAN TURKEY MEATBALL SOUP
The perfect low-fat comfort soup on a cold winter's day. I improvised this from looking at Italian Sausage Soup recipes. My husband and guests couldn't stop raving about it. I used Roasted Garlic diced tomatoes (Italian flavor would work) and Flame Broiled frozen Turkey meatballs from Trader Joe's.

Steps:
- In a large soup pot, sauté the onion in oil for a couple of minutes, then add garlic, celery, carrots, and red bell pepper. Cook for about 15 minutes, stirring occasionally.
- Add zucchini and cook another 5 minutes. Add Italian Seasoning and cook for another few minutes.
- Add canned tomatoes, chicken broth, wine, barley and freshly ground black pepper. Simmer for 30 minutes.
- If too thick, add about a cup of water. Add frozen turkey meatballs; bring back to a boil and simmer another 20 minutes.
- Add spinach; simmer 5 more minutes. Taste and add salt, if necessary, and simmer another few minutes.

TURKEY MATZO BALL SOUP
I've substituted sage here for the more commonly-used dill, to keep the soup's flavor more in line with Thanksgiving. If it's post-holiday time and you have leftover turkey meat, feel free to add it to the soup in hunks, about 5 to 10 minutes before serving, to warm it through without overcooking it. You can use neutral oil in place of the chicken fat, or even melted butter, if you don't keep a kosher kitchen and/or want to make your ancestors turn over in their graves.

- In a medium to large mixing bowl, beat the eggs until they are uniformly yellow. Whisk in the fat, then stir in the matzo meal, panko and teaspoon of salt and mix gently to combine. Add the seltzer, gently mix again, then cover and chill in refrigerator for 30 minutes.
- Bring the stock to a boil in a wide pot with a lid. Remove the matzo mixture from the refrigerator and use moist hands to gently form the mixture into 1-inch diameter balls. Add them to the boiling stock, along with the carrot and the dill. Reduce the heat to a high simmer, cover and let cook undisturbed for 30 minutes.
- Taste the broth and season with salt and pepper as needed. Serve immediately.

- Put Reynolds slow cooker liner in crock pot.
- Wash carrots and celery.
- Cut baby carrots in half width-wise or chop "adult" carrots into crock pot.
- Remove ends of celery ribs along with any tough strings and cut in bite sizes into crock pot.
- Remove ends and skin from onions and coarsely chop them into crock pot.
- Shape turkey breast into mini meatballs 1/2-1 inch each and put on top of vegetables in crock pot.
- Add sea salt and fresh black pepper to taste.
- Pour 1 1/2 quarts of the chicken broth over crock pot contents and cook on HIGH 6 hours.
- After 6 hours lift lid, stir soup, separate turkey balls as needed.
- Remove about 1 cup of the broth in the crock pot and dissolve bouillon cubes in it. Microwave broth to speed dissolution if necessary.
- Meanwhile add wild rice to crock pot and stir.
- Add in the remaining chicken broth and the dissolved bouillon mixture. Stir well.
- Cook on LOW 2-3 more hours, depending on how tender you want the rice. Enjoy!

ITALIAN WEDDING SOUP WITH TURKEY MEATBALLS
Classic Italian wedding soup is beloved for its simplicity and satisfaction. This turkey version is lean, while meatballs stay moist by simmering in broth. Start with the most flavorful broth you can get your hands on (homemade is ideal, but store-bought works well too), then pack the meatballs with flavor (garlic and parsley) and staying power (egg, panko and cheese, to gently bind them together). - Combine the chicken broth and 2 tablespoons oil in a large pot and bring to a boil.

I love Turkey and I love soup, so there's no way I'm getting rid of that Turkey carcass. This is my basic chicken soup recipe with Turkey instead. The garlic and tomato sauce add terrific flavor and nice color. I'll eat it all year round.

- Add finely chopped onion, (2) celery stalks and garlic to 2 T of vegetable oil in a soup pot.
- Sweat until tender.
- Add turkey, remaining chicken broth, tomato sauce and water.
- Also add fresh herbs, garlic salt and pepper.
- You may add more water if necessary.
- Bring to a boil and simmer for 1 hour.
- Strain soup into another pot removing the flavoring vegetables, and carcass.
- Return broth to soup pot.
- Remove meat from the carcass and add to broth.
- Chop remaining and celery into small pieces and add to soup.
- You may also add additional turkey leftovers at this point.
- Return to a boil and simmer for 1 1/2 hours.
- Put the carrots in 45 minutes before finishing.
- Serve with fine egg noodles.

- Line a large baking sheet with wax paper.
- Place turkey, breadcrumbs, egg, 1 1/2 teaspoons cumin, 1 1/2 teaspoons oregano, 1/2 teaspoon pepper and 1/4 teaspoon salt in a medium bow. Mix gently until combined. Shape the mixture into 1 1/2 balls and transfer to the baking sheet. (You should have about 20 meatballs.) Place in the refrigerator and chill for at least 20 minutes or until ready to use.

- Carefully submerge the meatballs in the simmering soup; return to a simmer and cook for 8 minutes. Add the rice and cook, stirring occasionally, until tender, about 5 minutes. Remove from the heat and stir in lime juice. Garnish with jalapeno and cilantro.
