Steps:
- Preheat the oven to 200 degrees F to keep the first batch of burgers warm.
- For the burgers: Coat a large saute pan with olive oil. Add the onions, season with salt and bring to a medium-high heat. Cook the onions until they are soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for 1 to 2 minutes. Turn off the heat and let cool.
- In a large mixing bowl, combine the turkey, soy sauce, sambal oelek, ginger, water chestnuts, cilantro and the cooked onions and garlic. (Reserve the onion pan to cook the burgers in later.) Add one-quarter to one-half cup water; this will help the burgers stay nice and moist. Using your hands, squish everything together until they are really well combined.
- Make and cook a little tester patty to be sure that the turkey is really well seasoned. Re-season if needed. If the burger is missing salt add more soy or just give a little sprinkey dink of salt.
- When the burger mix is seasoned appropriately, form the mix into 4 equal size patties.
- Coat the saute pan with new olive oil and bring to a medium-high heat. Place the burgers in the pan. Be sure not to crowd the pan, if you need to work in batches go ahead! Cook the burgers for 5 to 6 minutes on each side. Place the cheese, if using, on the burger and cook for 1 more minute.
- Toast the buns in a broiler or toaster. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with tomato, onion and lettuce. Close up each burger, give each one a little squish and eat em' up!

KILLER TURKEY BURGERS
Steps:
- For the turkey burgers: Coat a large saute pan with olive oil and toss in the onion. Season with salt and bring the pan to medium heat. Cook the onion until soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for another 1 to 2 minutes. Turn off the heat and let cool.
- In a large mixing bowl, combine the turkey, water chestnuts, soy sauce, cilantro, ginger, sambal if using and the cooked onions and garlic. (NOTE: Save the onion pan to cook the burgers in later!) Add 1/4 to 1/2 cup water to the mix--this will keep the burgers really moist! Use your hands to squish the mixture until everything is really well combined.
- Make, cook and eat a little tester patty to be sure the turkey is really delicious. If the seasoning isn't just right, add a little more soy or a sprinkey-dink of salt. When you're confident the burger mix is perfectly seasoned, form it into 4 equal patties.
- With a paper towel, wipe out the saute pan you used to cook the onion, coat the pan with fresh olive oil and bring it to medium-high heat. Add the burgers, being sure not to crowd the pan--if you need to work in batches, knock yourself out. Cook the burgers for 5 to 6 minutes on each side. The burgers should be browned and cooked through when done. (If working in batches, keep the first batch warm in the oven at 200 degrees F while cooking the second batch.)
- For the toppings: Mix together the mayo and sambal oelek in a small bowl. Toast the burger buns and top with the burgers. Garnish as desired with the cheese, tomato, red onion, lettuce and spicy mayo.

Transfer to a low rack in the oven and broil until the burgers are cooked through and the buns are toasted, 2 to 3 minutes. Remove the buns from the rack and top the burgers with cheese. Return to the oven and broil until the cheese melts, about 1 minute.
- Stir to combine the mayonnaise and remaining 1 tablespoon sambal oelek in a small bowl. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with a slice of tomato and onion and a piece of lettuce. Close up each burger, give each one a little squish and eat em' up!

- Preheat the oven to 375 degrees F.
- Smash the garlic cloves, sprinkle with some salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Whisk the garlic with the balsamic, Worcestershire, and hot sauce in a small bowl.
- Crumble the turkey and beef into a large mixing bowl. Pour the garlic mixture over the meat and form into 4 (5-ounce) burgers. Cover and set aside while you cook the onions.
- Meanwhile, heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the onion and cook, stirring occasionally, until browned but not mushy, about 15 minutes. Season the onions with the remaining teaspoon of balsamic and salt and pepper, to taste.
- Heat a large nonstick skillet over medium-high heat for a minute. Brush 1 side of the burgers with the oil and season with salt and pepper, to taste. Cook seasoned side down until browned, about 2 minutes. Brush and season the top of the burgers, flip and cook until other side is brown, about 2 minutes more.
- Transfer burgers to a baking dish and bake until an instant-read thermometer inserted sideways into the burgers registers 160 degrees F, about 5 minutes. Place the burgers on the buns or in pita and let rest for a few minutes. Serve with the caramelized onions and garnishes of your choice.

MOIST TURKEY BURGERS
I changed the recipe to make these delicious burgers for more people. I caramelized the onions to give it more depth of flavor. I also added Dijon mustard and real garlic instead of garlic powder. I also cut down on the amount of bread crumbs and made them out of whole wheat to make them a little healthier. I also omitted the soy sauce for the same reason. They came out great. The only thing I would do different next time is to give them just a little heat. Enjoy.

Just enough seasonings to make them so much tastier than just plain old turkey burgers, plus the bread crumbs and other added ingredients "bulk up" the turkey, helping you to get more bang for your buck. - Prepare your grill (either charcoal or gas) for direct high heat. Or right before cooking, heat a griddle or large cast iron frying pan on the stovetop.
- Combine the turkey, bread crumbs, mayonnaise, chives, green onions, Worcestershire sauce, chili sauce, basil, salt and pepper in a large bowl and work the mixture with your hands to just mix. Do not over mix or the burgers will be tough. Form the mixture into 4 1-inch thick patties.

- Preheat oven to 350 degrees and place rack in the middle of the oven; .
- Combine the ground turkey, salt and pepper in a large bowl. Add 1 tablespoon oil, 1 tablespoon of the wine, soy sauce, red wine vinegar, chili sauce, if desired, mustard and marjoram. Use your hands to mix just until the ingredients are incorporated. (Avoid over mixing, which will toughen the burgers.).
- Shape into 4 equal-size burgers, about 1 inch thick. Season them on both sides with salt and pepper to taste.
- In a large, oven proof skillet over medium-high heat, heat the remaining 1 tablespoon of oil until it simmers.
- Add the burger and sear, undisturbed, for 2 to 4 minutes, until a crust has formed on the bottom.
- Carefully turn the burgers over and sear on the second side, 2 to 4 minutes. (They will not be cooked through).
- Add the remaining wine to the pan and transfer the skillet to the oven.
- Roast for about 10 minutes, or just until the center of the burgers registers 165 degrees on a meat thermometer.
- Check the temperature early and often to avoid overcooking. The burgers should be just firm, but not hard to the touch, when they're done.
- Serve warm, with a little of the wine from the pan, if desired.
