TENDER BREADED TURKEY CUTLETS
I came up with this thinking of a different way to serve the turkey breast. The sour cream seals in the moisture and no one would ever guess that it's in there. A great new way to try turkey. This is my husband's new favorite turkey dish.

Steps:
- Mix the bread crumbs and cheese in a shallow dish. Spread both sides of turkey with sour cream and press into the bread crumb mixture to coat.
- Heat the oil in a skillet over medium heat. Place turkey in the skillet and cook 5 to 7 minutes on each side, until lightly browned and cooked through.

- 1. Combine flour, paprika , salt and pepper in a quart Ziploc bag. Dredge turkey cutlets in flour, shake off excess. Place olive oil and 2 tbsp butter in a large non stick skillet over medium heat. Cook the turkey cutlets about 2 minutes to brown on each side. Remove turkey cutlets and keep warm. Add remaining butter to the pan , add mushrooms and green onions, cook,stirring for two minutes;add sherry and stir to combine 2. Add the herbs and heavy cream. Cook down until reduced to a lightly thickened sauce, about 2 minutes. Return turkey cutlets to skillet, cooke for two minutes, spooning sauce over cutlets 3. Serve with Buttered Noodles

- In a large resealable plastic bag, combine the flour, salt if desired and pepper. Add the cutlets, two at a time and shake to coat. In a skillet, cook cutlets in butter for 2-3 minutes on each side or until lightly browned. , Meanwhile, in a skillet, saute mushrooms in oil until tender. Add garlic and rosemary; cook and stir for 1 minute. Add the tomatoes, wine or broth, brown sugar, salt if desired and pepper; cook and stir for 5 minutes. Stir in butter and basil. Serve cutlets with sauce. Sprinkle with lemon juice and parsley.

Steps:
- Season Cutlets with your favorite rub or spice mix and allow cutlets to set for 20 minutes at room temperature.
- Heat a heavy skillet over high heat.
- Add olive oil and reduce heat to medium high. Add butter and swirl pan to mix and melt butter.
- When butter has melted add cutlets to pan and brown 2 minutes per side. Remove cutlets from skillet to a plate to rest.
- Carefully pour artichokes and marinade into the skillet and deglaze.
- Add onions and stir.
- Add cutlets back into skillet on top of artichokes and onions.
- Reduce heat to low and cover skillet.
- Simmer for 10 minutes.
- Just before serving add tomatoes on top of cutlets and cover for 3 minutes or so to warm but not cook the tomatoes.
- To serve drizzle lemon juice over dish while in the skillet.
- Serve 2 cutlets and vegetables to each diner.
- Garnish with Olive Tapenade.

- In a 5-quart slow cooker, stir together the carrots, tomatoes, artichoke hearts, onion, olives and garlic until combined. Sprinkle the turkey with salt and pepper to taste. Place the turkey and sausage on top of the vegetables in the slow cooker.
- In a medium bowl, whisk together the chicken broth, tomato paste, wine and oregano; pour over the turkey in the slow cooker.
- Cover and cook on low heat setting for 4 to 5 hours.

- Lightly brown the prosciutto in the oil, then scoop it out of there. Brown the turkey thighs in the same fat, sprinkling with salt and pepper and adding the thyme as they cook. Get the skin side good and brown but don't worry about the other side much. Remove and set aside. Preheat the oven to 200 degrees.
- Cook the vegetables and garlic together in the same pan, stirring and seasoning with salt and pepper as you cook. When they're a bit softened, toss in the olives and tomatoes; lay the thighs, crisp side up, on there. Add liquid to come just to the bottom of the thighs and bake, checking occasionally to make sure the vegetables don't dry out (you might stir them once or twice also). When the turkey is tender, it's done. Garnish if you like and serve.

- Preheat the oven to 350°F.
- Bring a pot of water to a boil for the shells. Cook according to package directions; drain.
- Meanwhile, in a large skillet, heat the olive oil over medium-high heat. Add onion and garlic and cook until onion is tender and beginning to brown, about 3 minutes.
- Add turkey, salt, and pepper, and cook until meat is light golden and heated through, stirring occasionally.
- Add artichoke hearts and stir to combine. Remove from heat; allow to cool.
- In a large bowl, combine the cooled turkey mixture with ricotta cheese, Parmesan cheese, eggs, basil, parsley, salt, and pepper. Stir.
- Cover the bottom of a 9x13-inch baking dish with 1 cup of marinara sauce. Holding a shell in the palm of your hand, stuff with large spoonfuls of turkey mixture, about 2 tablespoons per shell. Place each shell in the baking dish. Keep working until dish is full; you should have about 24 shells.
- Drizzle remaining marinara sauce over shells and top with grated mozzarella.
- Bake shells until warmed through and until cheese begins to brown, about 25 minutes.

- Preheat grill to high.
- Sprinkle turkey pieces with salt and pepper.
- Cut cheese into thin slices to fit neatly in one layer, slightly overlapping, on turkey steaks. Set aside.
- Heat 2 tablespoons butter in a heavy skillet large enough to hold the turkey steaks in one layer. Add the steaks and cook about 4 minutes or until nicely browned on one side. Turn the steaks and top each with one slice of prosciutto. Sprinkle evenly with rosemary and cover closely. Cook about 3 minutes.
- Transfer prosciutto-topped steaks to a serving dish. Add remaining 1 tablespoon butter to the skillet and when it melts add shallots. Cook briefly, stirring, and add mushrooms. Cook, stirring, about 2 minutes.
- Add chicken broth and stir. Cook about 1 minute over relatively high heat.
- Meanwhile, cover prosciutto-topped steaks with equal portions, and in one layer, of cheese. Run briefly under the broiler until cheese melts. Pour mushroom mixture over the cheese and serve hot.

- Heat broiler. If using a broiler-proof rimmed baking sheet, set rack 4 inches from heat; if using a broiler pan, set rack so that top of pan is 4 inches from heat. On sheet (or pan), arrange potatoes and mushrooms in a single layer. Sprinkle with bacon, sage, 1 teaspoon salt, and 1/4 teaspoon pepper.
- Broil, tossing every 5 to 6 minutes, until potatoes are tender and browned, 20 to 25 minutes. Transfer to a serving bowl (reserve sheet).
- Place turkey cutlets on sheet; season with salt and pepper, and sprinkle with Parmesan, dividing evenly. Broil until cheese is golden and turkey is opaque throughout, 6 to 8 minutes.
