This is also called Fruit Cocktail Cake. It originally called for 2 cups of sugar, but I found it too sweet and cut it to 1 cup.

- Sift together flour, 1 cup sugar, salt, and baking soda. Beat 2 eggs and pour over dry mixture. Add fruit cocktail. Stir together.
- Grease and flour pan. Bake at 325 degrees F (165 degrees C) for 45 minutes.
- Over low heat, cook together 1 cup sugar, 1 cup milk, 1/2 cup butter or margarine and coconut. Pour over cake while still hot.

Yellow cake mix, canned fruit cocktail, coconut, and nuts blend in this recipe that may look a bit 'ugly,' but tastes great.

- Combine cake mix, undrained fruit, 1 cup coconut and eggs.
- Blend; beat at medium speed for 2 minutes and pour into a greased 9 x 13 inch pan.
- Sprinkle with brown sugar and nuts. Bake at 325 degrees F (165 degrees C) for 45 minutes. Bring butter, sugar and milk to a boil. Boil 1 minute. Stir in 1/2 cup coconut. Spoon over warm cake. Top with prepared whipped topping, if desired.

HOT FUDGE PUDDING CAKE
This is my husband's favorite recipe. Someone brought this to my Grandpa's funeral in 1968, and I've been making it since. The dark fudge cake over the hot pudding is delicious served with whipped cream or ice cream. This is very rich and will be loved by chocolate lovers!

- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 9x9-inch baking pan.
- Whisk together flour, baking powder, white sugar, 2 tablespoon cocoa powder, and salt in a large bowl.
- Stir in milk and butter until smooth.
- Fold in walnuts until just combined.
- Spread batter evenly in the prepared baking pan.
- Mix 1/4 cup cocoa and brown sugar in a small bowl; sprinkle mixture on top of the batter.
- Pour hot water over the batter.
- Bake in the preheated oven until the center of the cake is almost set, about 45 minutes. Brown sugar, cocoa, and hot water will combine to form a chocolate sauce that will settle to the bottom of the cake during baking.
- Best served warm.

Steps:
- Blend all cake ingredients except for brown sugar and nuts and beat 4 minutes with electric mixer at med. speed.
- Pour into a well greased 9 x 13 pan.
- Sprinkle with the brown sugar and nuts.
- Bake in a 325F oven about 45 minutes or tested done. Cool 15 minutes.
- Meanwhile make glaze by combining glaze ingredients and boiling for 2 minutes.
- Pour over warm cake.

UGLY SWEATER CAKE

- Remove the cake from the pan and place bottom-side up on a platter.
- Put 1 container of plain frosting in a piping bag with an X-shaped nozzle or in a resealable bag with the bottom corner snipped. Add green coloring to each of the other 2 containers of frosting and mix until they are a consistent green.
- Using an offset spatula, spread the green frosting evenly over the top and sides of the cake. Pipe the plain frosting in a Y shape to make it look like a sweater V-neck and front fastening. Decorate with cake decorations and holiday candies--use any design you like and make it your own.
- Preheat the oven to 350 degrees F.
- In a large bowl, combine the flour, sugar and salt. Stir together and set aside.
- In another bowl, mix the buttermilk, baking soda, vanilla and eggs. Mix with a fork and set aside.
- In a medium saucepan, melt the butter and add the cocoa. Whisk together to combine. Meanwhile, bring 1 cup water to a boil. When the butter is melted, pour the boiling water in the pan. Allow to bubble for a moment, then turn off the heat.
- Pour the chocolate mixture into the flour mixture. Stir together for a moment to cool the chocolate, then pour in the egg mixture. Stir together until smooth, then pour into a rimmed half sheet pan and bake until an inserted toothpick comes out clean, about 20 minutes. Let cool, then cut the finished cake in half so it is the size of a quarter sheet pan.
UGLY CAKE
This is a very yummy cake that people always ask me to make for parties. It's also very easy but so good!

- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Meanwhile, in a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. Combine the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with water, beating well after each addition., Beat egg whites with clean beaters until stiff peaks form; fold into batter. - Preheat the oven to 325 degrees fahrenheit and spray a 9x13 inch baking pan with nonstick cooking spray. In the bowl of an electric mixer, add cake mix, fruit cocktail with syrup, 1 cup of the coconut and the eggs. Mix on medium low for 2 minutes, or until well blended. Pour into prepared pan. Sprinkle with brown sugar. Bake 45 minutes, or until set but don't over bake. While cake is cooking, make topping by heating the butter, sugar and milk on medium low in a saucepan, stirring occasionally. Once it boils, boil for 2 minutes. Remove from heat and add remaining coconut. Pour over hot cake when removed from oven. Serve warm or cool.

- In a small bowl, combine cocoa and hot water until smooth; cool. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each. THAT CAKE! (AKA) BROWN SUGAR PUDDING CAKE
This Cake is so good. This is the one I talk about on my page. It is quite simple to make but has the texture closer to a bread pudding. The family just loves this and have requested it on many occasions Including a Double layer Bundt cake for a wedding. NOTE: In all my recipes I use (I can't believe it's not butter)spread and it works great and taste great.

- preheat oven to 350°F.
- In large mixing bowl beat eggs till blended, while mixer is still going add margarine, water, pudding mix and blend well about 1 minute.
- After this is done add cake mix beat on medium speed till well blended.
- Stop mixer then add brown sugar, nutmeg and cinnamon, restart mixer and add your extracts, mix well.
- Add the 3 Tbsp water blend, then fold in your pecans.
- Batter should be thick but will still pour slowly out of the bowl.
- Spray Bundt pan Well with floured baking spray, Pour batter evenly into Bundt pan.
- Place Bundt pan onto center rack and bake 55-60 minutes, or until cake springs back when pressed.
- IMPORTANT: *Do not open oven door until your baking time is almost up.(I know it's hard)But opening the oven to early on Bundt cakes cause them to drop.*.
- When done remove pan from oven and set on wire rack for 5 minutes just long enough for pan to cool a little.
- Next move the pan into the freezer for 20 minutes.
- After 20 minutes remove the cake and pan from the freezer and invert it onto a cake plate. and start your glaze.
- GLAZE:.
- In a sauce pan combine sugar, milk and butter.
- Cook over medium high heat stirring constantly, Mixture will start to boil.
- Boil mixture for 3 minutes stirring constantly.
- After 3 minutes remove from heat then add the vanilla and stir, keep stirring until glaze just begins to thicken.
- Drizzle the amount of Carmel glaze you want over cake.
- After cake and glaze have totally cooled sprinkle a lite dusting of powdered sugar over entire cake just before serving.

This came from a friend in my Sunday school class several years ago. I've never tried it, but just now found it in my stack of saved recipes. I'm putting it here so that I don't lose it. I've found other similar recipes on here, but none that are exactly the same.

Steps:
- Set ½ cup brown sugar aside to sprinkle on cake before you bake. (I have used both dark and light, either is yummy.).
- Mix all ingredients except brown sugar and pour into a 9 x 13 greased and floured cake pan.
- Sprinkle brown sugar on top of cake batter.
- Bake at 350 degrees for about 40 minutes or until toothpick comes out clean.
- Cool 15 minutes and pour glaze over top of warm cake.
- Enjoy!
- NOTES: My friend preferred brown sugar when making the glaze, and she said she used about 1/2 of a 12-oz. can of evaporated milk when making the glaze.
