UNCLE DOBO'S BACON WRAPPED BBQ SALMON

My easy way of BBQing salmon. When I was working on the fishing boats in Alaska, we usually fixed the salmon this way. You can leave off the bacon, if you want, but it tastes so good with it!

Uncle Dobo's Bacon Wrapped BBQ Salmon image

Steps:

  • Prepare your barbecue.
  • Double foil piece(s) large enough to hold salmon in a packet.
  • Mix together the mayo, garlic, and mustard (if using). Slather the place where the salmon will sit with about a quarter of the mixture.
  • Season salmon with salt and pepper. Lay lemon slices on top of salmon. Wrap salmon with the bacon.
  • Lay the wrapped salmon on the mayo mixture on the foil package. Slather the wrapped salmon with the remaining mayo mixture.
  • Barbecue on the grill until done and flakes easily, which will take about 20-25 minutes. Discard bacon before serving.
  • Makes 8 servings.

1/2 fresh lemon, in slices
1/2-3/4 lb sliced bacon
3/4 cup mayonnaise
1 finely minced garlic cloves or 1/4 teaspoon garlic powder
1 teaspoon mustard (optional)
aluminum foil

UNCLE DOBO'S RAMEN OMELET

This is a very popular recipe with my family of sisters and their kids. Both my sisters claim this recipe as "theirs." ;) Good for breakfast or even dinner. I've heard that a lot of college kids and bachelors like this one, too. It tastes great, but since it's full of butter, noodles, and cheese it's not something I make often.

Uncle Dobo's Ramen Omelet image

Steps:

  • Cook the ramen according to package directions, but without adding the seasoning packet (too much sodium, so toss the packet). Drain well.
  • Melt the butter in a pan, then add the Parmesan and stir well. The cheese should almost become like a paste together with the butter.
  • Add the cooked noodles and stir well to coat.
  • In a bowl mix together the egg and onion/scallion/chives.
  • Pour the egg mixture over the noodles in the pan and stir well.
  • Cook omelet until egg has set, then flip half of the omelet over the other.
  • You can garnish with extra Parmesan, if you like. Serve.
  • Makes 2 big servings.

1 (3 ounce) package ramen noodles
3 tablespoons butter
1/4 cup grated parmesan cheese
2 eggs, beaten
2 tablespoons chopped scallions or 2 tablespoons chopped chives, to taste
grated parmesan cheese, for garnish (optional)
Tabasco sauce, for serving (optional)

A delicious use of some of my favorite things - bacon and salmon! The salmon stays really moist from the bacon, and the skin helps protect the bottom from cooking prematurely.

Bacon-Wrapped Salmon image

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a baking sheet liberally with olive oil.
  • Place the salmon fillets onto the baking sheet skin-side-down. Sprinkle the fillets with garlic powder, dill, salt, and pepper. Lay the bacon strips over the fillets to cover completely. Do not overlap the bacon strips.
  • Bake in the preheated oven until the salmon is no longer translucent in the center, 20 to 25 minutes. Turn the oven on to broil and cook until the bacon has crisped, 1 to 2 minutes.

Bacon-Wrapped Bourbon-Marinated Salmon image

Steps:

  • Mix steak seasoning sauce, 6 tablespoons brown sugar, bourbon, and scallions together in a large bowl to make marinade.
  • Toss salmon cubes in marinade. Cover with plastic wrap and let sit in the refrigerator, 4 to 6 hours.
  • Wrap each salmon cube with bacon; use a toothpick to hold bacon in place. Sprinkle remaining 2 tablespoons brown sugar on top.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Grill bacon-wrapped salmon, turning frequently, until bacon begins to crisp, about 5 minutes.
