unless I have to I dont buy frozen fries. This is a quick & easy freis & oh so good. Makes a perfect lazy day snack. I have made it for that a few times.

Steps:
- 1. In a large heavy frying pan heat the oil over medium heat.
- 2. Celan & slice the potatoes. Carefully drop into the hot oil & fry for 3 to 5 mins. Remove from oil & drain on paper towel.
- 3. After all has been fried. Repeat once again for cunchie fries for about another 5 to7 mins or until a nice drak golden brown.
- 4. Season with the salt & pepper.
- 5. This can also be baked if you dont want to deepfry them. That would take about 15 to 20 mins at 350F. Make sure to mix around the fries.
UNFRIED FRENCH FRIES
You can have your french fries and eat them too! This recipe is perfect for the dieter. Not even a trace of fat. I got this recipe... I don't know HOW many years ago, out of a cook book that was put out by one of Oprah Winfrey's personal chefs.

- 1. Preheat oven to 400/.
- 2. Slice each potato lengthwise into 1/4 inch ovals, then slice lengthwise into thin french fry strips. Place french fries in a bowl of ice water to crisp.
- 3. Line a baking sheet with aluminum foil or the new nonstick foil, and coat the foil with a few sprays of the cooking spray.
- 4. Combine the egg whites and the Cajun spice or Old Bay Seasoning in a bowl.
- 5. Add the potatoes and mix to coat. Pour the coated potatoes onto the prepared baking sheet and spread them out into a single layer, leaving a little space between them.
- 6. Place the baking sheet on the bottom shelf of the oven. Bake for 50-60 minutes, or until the fries are crispy and done, turning them every 5 minutes or so with a spatula so that they don't stick to the foil and brown evenly.
- 7. Serve immediately.
UN-FRIED FRENCH FRIES
These look almost as good as they taste. But they are NOT McDonald's fries. At half a gram of fat per serving (versus 16 grams for the same amount of the fried variety) you can munch away guiltlessly. Steps:
- Preheat the oven to 400 degrees.
- Slice each potato lengthwise into 1/4-inch ovals, then slice each ovallengthwise into matchsticks (i use a mandoline which makes this go much quicker).
- Coat a baking sheet with 3 sprays of the vegetable oil.
- Combine the egg whites and cajun spice in a bowl.
- Add the matchstick potatoes and mix to coat.
- Pour the coated potatoes onto the prepared baking sheet and spread them out into a single layer, leaving a little space between them.
- Place the baking sheet on the bottom shelf of the oven.
- Bake for 40 to 45 minutes, until the fries are crispy, turning them every 6 to 8 minutes with a spatula so that they brown evenly.
- Serve immediately.

- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.

- Peel the potatoes and cut into 1cm-thick batons. Put into a bowl of cold water and leave to soak for at least 2 hrs to remove the starch from the potatoes - this will help them crisp while frying.
- Drain the potatoes well and pat dry with kitchen paper. Fill a deep pan no more than a third full with oil and heat to 140C, or until a cube of bread dropped in browns in 60 seconds. Fry the French fries in batches for 6 mins per batch until golden straw-coloured, cooked through and lightly crisp. Drain well on kitchen paper.

- Soak potatoes in a large bowl of water for about 30 minutes. Pat dry thoroughly with paper towels.
