VANILLA DELIGHT
I got this recipe years ago from a friend. This goes really fast. You can also use different puddings to change it up. yummy!

Steps:
- 1. Let butter or margarine soften to room temp. Mix flour butter and nuts together. Press in a 13x9x2 glass baking dish. Bake in a preheated 375* oven for 10 min. Chill
- 2. For the filling: Let cream cheese soften to room temp. Mix cream cheese, powdered sugar,1 cup cool whip together with mixer. Pour over the crust and chill.
- 3. Mix vanilla pudding with 3 cups of milk and pour over the cream cheese layer. Top with remaining Cool Whip and chill.

- Preheat the oven to 350 degrees F (175 degrees F). In a medium bowl, stir together the flour, 1/2 cup pecans and melted butter or margarine. Press into the bottom of a 9x13 inch baking dish. Bake for 15 minutes in the preheated oven, then chill until cold.
- In a medium bowl, mix together the cream cheese and confectioners' sugar until smooth. Stir in the whipped topping. Drop spoonfuls onto the chilled crust, and spread evenly. Return to the refrigerator while you prepare the next layer.
- In a medium bowl, mix together the pudding mixes and milk. Yes this is half as much milk as the package states. Spread over the cream cheese layer. Chill until set.
- Spread remaining whipped topping over the top, and garnish with chopped pecans.

FRENCH VANILLA DELIGHT DESSERT
One of my favorite desserts---a real comfort food. My Grandma made this for most family get-togethers and this is her recipe. A great dessert to bring for a buffet meal or potluck. Cook time does not include time to let the dessert chill and set in the refridgerator.

Steps:
- For crust: Mix flour and softened butter.
- Add pecans and mixture should be crumbly and a bit dry.
- Press into a 9X13 greased pan and bake at 325 for 10-15 minutes until very lightly brown.
- Let cool.
- Mix 2 packages of pudding with 3 cups milk.
- Let set.
- Mix together 8 oz.
- cream cheese, sugar, and 1 tablespoon milk.
- Fold in 1 cup cool whip and spread mixture onto cooled crust.
- Add pudding for the next layer and spread evenly over cream cheese layer.
- Add remaining cool whip on top and chill before serving for at least 2 hours.

VANILLA AND CHOCOLATE DELIGHT
This makes a delicious dessert that is layers of pecans, cream cheese, vanilla pudding and chocolate pudding. My husband found this recipe at allrecipes.com and wanted me to make it because it sounded like a dessert his grandmother used to make. I am now asked to bring it to family gatherings!

Steps:
- Preheat oven to 375.
- In a medium mixing bowl, combine pecans, flour and butter. Press nut mixture into a 9x13 inch pan. Bake for 15 minutes. Allow to cool.
- Whip together cream cheese, confectioners sugar and half of the frozen whipped topping. Spread this mixture on top of baked crust.
- In a large mixing bowl beat milk, chocolate pudding and vanilla pudding until thick. Pour over cream cheese layer. Top with remaining whipped topping and sprinkle crushed Nestle Crunch bars on top.
- Let set in fridge until chilled.

Steps:
- 1. Generously coat the baking sheet with cooking spray, and set it aside.
- 2. Make the sugar syrup: Combine the sugar, honey, water, and cream of tartar in a medium-size (4-quart) saucepan, and mix with the heatproof spatula to combine. Bring the mixture to a boil over high heat, and insert the candy thermometer. Reduce the heat to medium-high and cook, without stirring, until the temperature reaches 260°F/127°C (hard ball stage), about 15 minutes.
- 3. Meanwhile (keeping an eye on the sugar syrup), make the cornstarch mixture: In a large (6-quart) saucepan, whisk together the cornstarch, confectioners' sugar, water, and cream of tartar to combine. Once the sugar syrup reaches 250°F/121°C (firm ball stage), place the cornstarch mixture over medium heat and cook, stirring constantly with the whisk; it will thicken and boil quickly, 2 to 3 minutes. Turn off the heat, but leave the mixture on the hot burner; stir well a few times with a whisk, and set aside.
- 4. At this point, the sugar syrup should be close to 260°F/127°C (hard ball stage); when it reaches that temperature, remove it from the heat and carefully pour it into the cornstarch mixture. Stir well with the whisk to combine. Bring everything to a low boil over medium heat. Then reduce the heat to low and cook at a low simmer, stirring frequently with the spatula, until the mixture is thick and gluey and a light golden color, 30 to 45 minutes. Don't turn your back on it! You need to make sure to scrape the bottom of the pan with the spatula every few minutes to prevent scorching and lumps.
- 5. Remove the pan from the heat and add the flavorings: stir in the rosewater, pistachios, and food coloring (if using).
- 6. Wearing oven mitts, immediately pour the candy into the prepared baking sheet. Place a piece of plastic wrap directly on the surface of the candy to prevent it from forming a skin as it cools. Allow it to cool until it has set and is firm and cool to the touch, 6 to 8 hours.
- 7. Gently peel off the plastic wrap. Dust the cutting board with the confectioners' sugar. Run the tip of a paring knife between the candy and the sheet, and gently turn the candy out onto the prepared board.
- 8. Place the cornstarch mixture in a medium-size bowl. Generously coat a sharp chef's knife with cooking spray, and use a gentle slicing motion to cut the candy into 1-inch squares. Dredge the pieces in the cornstarch mixture until well coated.
- Store the Turkish delights, layered with wax paper, in an airtight container at cool room temperature for up to 1 month.
