Vegan Coconut Cupcakes image

Steps:

  • Whisk together the soy milk and vinegar and set it aside to allow curdling. Add the sugar, oil, vanilla and coconut extracts to the milk mixture and whisk until it's foamy.
  • In a separate bowl, sift together flour, cocoa powder, baking soda, baking powder and salt. Add in two batches to wet ingredients, beating until no large lumps remain.
  • Pour into lined cupcake pans, filling cups about 3/4 full. Bake 18-20 minutes and remove when toothpick inserted in center comes out clean. Transfer to a wire rack and allow them to cool completely.

Steps:

  • Preheat oven to 350°. Melt butter in a 9-in. square baking pan. On top of melted butter, sprinkle crumbs, then coconut, then baking chips, then macadamias, then pineapple and then mangoes. Pour well stirred coconut milk over all. Do not stir. Bake until a toothpick inserted in center comes out clean, about 30-35 minutes. Refrigerate at least 4 hours or overnight. Cut into bars and serve.

  • Preheat the oven to 350°F. Prepare a standard size cupcake/muffin baking tray with cupcake liners.
  • In a medium sized pot, combine the custard powder and sugar. Whisk in the coconut milk. Turn the heat on to medium and bring the custard to a boil, stirring often to prevent scorching. Once thickened, remove from heat. Do not over cook.
  • In a stand mixer with a balloon whisk (or with a large bowl and beaters), beat the vegan butter and shortening together until fluffy. Add in the confectioner's sugar, one cup at a time. Beat for 3-4 minutes, scraping down the sides occasionally. Add in the extracts and beat another minute. Add the coconut milk 1 tablespoon at a time, until the frosting reaches a pipe-able consistency, slightly too firm is easier to manage than too soft. Beat for 5 minutes more.
  • Using the wide end of a frosting tip, an apple corer or small knife, remove the centers from the cupcakes.

  • Preheat oven to 350°. Line 2 muffin pans with 24 cups; set side. In a medium mixing bowl, combine dry ingredients: unbleached flour, coconut sugar, baking soda, and pink salt; stir to combine. Next, add in the wet ingredients: full fat coconut milk, coconut oil, filtered water, apple cider vinegar, and vanilla extract. Using electric beaters, whip on medium high until combined well.
  • Next, divide evenly between muffin cups. I like to use a medium ice cream scoop to make sure they are all uniform! This batter should fill between 20-24 cups, depending on how large of a scoop you have.
  • Pop in the oven and bake for 15-16 minutes, until the edges start to turn slightly golden, and a toothpick inserted into the middle comes out clean. Remove from oven.
