Antipasto Salad With Marinated Black Walnuts image

Steps:

  • In a large bowl, whisk together the 2 tablespoons of white verjuice and the shallot. Slowly whisk in the oil. Season to taste with salt and pepper. Add the greens to the bowl and toss to coat. Place the greens on a platter and cover with the red pepper, ham and cheese. Sprinkle with the black walnuts and serve.

  • Combine the walnuts and verjuice in a small jar. Seal and refrigerate for at least 24 hours or up to 1 week. Drain and use as a topping for salads, fish, cream soups or green beans, or serve with cheese

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture. Stir in 1-1/4 cups walnuts. Finely chop the remaining nuts. , Shape dough into two 15-in. rolls. Roll in chopped nuts, pressing gently. Wrap each in plastic wrap. Refrigerate for 2 hours or until firm. , Unwrap dough; cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Bake at 300° for 12 minutes or until lightly browned. Remove to wire racks.

Steps:

  • Toast walnuts on a baking sheet until fragrant and taking on some color. When they are cool enough to handle, chop walnuts roughly, and season to taste with kosher salt.
  • In a heavy-bottomed, stainless-steel saucepot, combine the corn syrup and maple syrup. Over medium heat, warm the syrups, then increase heat slightly until frothy and bubbling, like large soap bubbles, taking care that it doesn't boil over. Lower the heat back to medium, and let the mixture slowly simmer, reducing slightly, about 12 minutes.
  • Carefully stir in the vanilla extract and the tea, and let the mixture cook for another 10 minutes.
  • Remove from the heat, and stir in walnuts.
