Steps:
- In a large bowl, with an electric mixer, beat cream cheese with cheddar, mustard, Worcestershire sauce, and a generous pinch of pepper until well combined. Mix in 1/4 cup pecans. Cover cheese mixture with plastic wrap, and chill at least 2 1/2 hours or up to overnight.
- Divide the cheese mixture in half, and shape each half into a ball. Spread remaining 3/4 cup pecans on a plate, and roll balls in pecans to coat completely, pressing nuts to adhere. Serve chilled.
THE HEAVYSET CHEESE BALL
Steps:
- Preheat oven to 300 degrees F.
- Place and spread all the almonds on a cookie sheet or in a shallow pan, pushing the almonds around until they turn color, about 20 minutes.
- Mix together the cream cheese and the mayonnaise. Add the bacon, salt and pepper, dill, and onion. Chill overnight.
- On a serving platter, make 2 pine cone shapes with the cheese. Begin to press the almonds at a slight angle into the cheese, starting at the narrow end of the pine cone shape.
- Do this in rows, continuing to overlap rows until all the cheese is covered. Garnish with fake sprigs, or real ones, or with rosemary.
- Serve at room temperature and spread on crackers.

Steps:
- Cook the bacon in a large nonstick skillet over medium-high heat until just starting to crisp but still pliable, about 5 minutes. Remove 1 slice to a paper towel-lined plate. Continue cooking the remaining bacon until browned and crisp, 2 to 3 more minutes; remove to the plate. Halve the slice of less-cooked bacon lengthwise. Finely chop the remaining bacon.
- Beat the cream cheese in a large bowl with a mixer on medium-high speed until smooth and creamy, about 2 minutes. Add the cheddar, scallions, Worcestershire sauce, hot sauce, a pinch of salt and the chopped bacon; beat until combined. Refrigerate until slightly firm, about 30 minutes.
- Form the cheese mixture into 3 balls (about 2 inches, 2 1/2 inches and 3 inches). Refrigerate until firm, at least 30 more minutes.
- Meanwhile, freeze the Monterey jack cheese 1 hour (this will make it less clumpy when grated). Grate the cheese on the small holes of a box grater. Gently press all over the cheese balls to coat completely. Put the 3-inch cheese ball on a small serving plate; insert a 4-inch wooden skewer into the middle. Stack the 2 1/2-inch and 2-inch balls on top, securing on the skewer.
- Press the currants into the top cheese ball for eyes; add a carrot nose. Use the halved bacon to make a scarf and add rosemary sprigs for arms. Place the pretzel crisp on top for a hat brim. Cut off about one-third of the olive so that it sits flat; place on top of the pretzel crisp for the hat. Serve with more pretzel crisps.
SOUTHERN MADE CHEESE BALL
This delicious cheese ball was developed and modified by me, and every time I serve it I am forced to share the recipe with everyone who tastes it. I roll mine in diced green onion, pecans (or other nuts) or bacon bits before serving. Try experimenting with different types of meats and cheeses. It's a great appetizer for any party. This one will be gone first. Enjoy!

7 FOODS TO SERVE WITH A CHEESE BALL - KITCHN
From thekitchn.com

- Pear and Apple Slices. Fruit and cheese make a wonderful match. Something firm, like pear or apple slices, allows for easy spreading and dipping. Pears are especially nice with a blue cheese ball, while apples pair well with cheddar.
- Crostini. Slice a baguette thinly, drizzle the slices with olive oil, bake them at 350°F for about 15 to 20 minutes until golden and toasted, and you have crostini.
- Crudité. A crudité platter is a classic sidekick to a cheese ball. Keep it simple with carrots and celery or upgrade the situation with veggies like fennel, cauliflower florets, and radishes.
- Halved and Toasted Mini Bagels. A good cheese ball starts with a cream cheese base, so it only makes sense to pair it with bagels. Mini bagels are the perfect size for snacking — slice and toast them ahead of time so they are ready to go when everyone’s ready to dig in.
- Pretzels. Pretzels are oft-forgotten vehicles for cheese and dips. Cheese balls are soft enough that salty pretzels can be dipped right into them, scooping out the goodness without the need of a knife.
- Roasted Potato Wedges. Arguably the only way to make potatoes even more tasty than they already are is to add cheese. Roast a big tray of potato wedges and enjoy them warm or at room temperature, with generous swipes of your cheese ball.
- Pita Triangles. Split open a pita triangle, spread some of the cheese ball inside, and you’ve got a cute little cheese sandwich. Or if you have a extra time to spare, turn those pita triangles into crunchy pita chips.
