VILLAGE FRIED RICE

My own recipe. Very easy and delicious too. Cook rice a few hours before frying or use last night left over. Reduce chilli if too hot. Try it and You will love it.

Village Fried Rice image

Steps:

  • Pound together shallots, garlic and chillies.
  • Heat oil and fry pounded ingredients until lightly brown, add stock and continue frying for a while.
  • Add rice and stir-fry for 2 minutes on medium flame.
  • Add soya sauce, salt, sugar, eggs and fried anchovies and stir-fry for another 2 to 3 minutes.
  • Served hot with slice tomato and cucumber.

3 shallots
1 clove garlic
10 small hot green chilies
1/4 cup oil
4 cups cooked rice
1 anchovy stock cube or 1 chicken stock cube
1 cup fried anchovy
2 eggs
3 tablespoons light soya sauce
salt
2 teaspoons sugar
1 slice cucumber
1 slice tomatoes

FRIED RICE RESTAURANT STYLE

A quick fried rice like you get at your favorite Chinese restaurant. A couple of eggs, baby carrots, peas and soy sauce is all you need.

Fried Rice Restaurant Style image

Steps:

  • In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  • In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
  • Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.

Steps:

  • In a large nonstick skillet, saute onion in oil until tender. Add ginger and garlic; saute 1 minute longer or until garlic is tender. Add the teriyaki sauce, lime juice, brown sugar, salt and hot pepper sauce; bring to a boil. Reduce heat; cook and stir for 2 minutes. Add rice and mixed vegetables; cook and stir over medium heat until vegetables are tender.
