Classic Shepherd's Pie image

Steps:

  • Heat oil in a skillet set over medium heat. Add the onion, garlic, thyme, rosemary, and half of the salt and pepper. Cook, stirring often, for 5 to 7 minutes. Preheat the oven to 350 F (180 C).
  • Crumble meat into pan and cook until brown all over. Sprinkle with flour. Stir in ketchup, tomato juice, Worcestershire sauce and mustard. Simmer for 5 minutes. Stir in mixed vegetables. Transfer to a 9-inch (23-cm) baking dish.
  • Whip the potatoes with the warm milk, remaining salt and pepper, butter and garlic until very fluffy. Spread potatoes evenly over meat mixture. Bake for 35 minutes or until potatoes are golden.

V's Kicked-Up Shepherd's Pie image

Steps:

  • Preheat oven to 350°F.
  • Cook potatoes in water just like you would for mashed potatoes. (I chop the potatoes small so they cook faster).
  • Once potatoes are cooked: cream with a hand mixer, adding 3 Tbl butter (or margarine) add cream, 2/3 cup shredded cheddar cheese and white pepper and salt. Whip until creamy, cover to keep warm while preparing the rest of the pie.
  • In large skillet, add onions, garlic and 3 tbsp butter and saute until translucent and fragrant. Add ground beef and brown until no longer pink, making small crumbles. (Drain off half of the drippings).
  • Add flour and onion soup mix. (this makes a roux) Mix well and simmer. Add beef broth, ketchup, Worcestershire sauce, Italian seasoning and cayenne pepper and combine thoroughly (will thicken) .
  • Add Peas and corn and continue to simmer for about 4 minutes.
  • Pour meat and vegetable mixture into casserole dish, 9x 13 casserole or large pie pan, top with mashed potato mixture and carefully spread to cover to edges, sprinkle remaining cheddar cheese. Place on baking sheet (just in case it spills over) in oven. Cook for 25 minutes or until golden brown.
  • Let sit for 5 minutes and serve!

Lightened-Up Shepherd's Pie image

Steps:

  • Put the potatoes in a large saucepan and add enough cold water to cover by 2 inches. Bring to a boil, cover and reduce the heat to maintain a steady simmer. Cook until a knife just pierces through the potatoes, about 7 minutes. Add the cauliflower, bring to a boil and simmer until a knife easily slides through the vegetables, about 20 minutes. Reserve 1 cup of the cooking water before draining.
  • Return the potatoes and cauliflower to the saucepan. Add the scallions and mash with a potato masher. Add 1/ 4 cup of the broth and continue mashing until almost smooth. If the mixture is dry and falling apart, add a few spoonfuls of the cooking water and continue mashing. The mixture should be thick and hold together. Season with salt and pepper.
  • Meanwhile, preheat the oven to 425 degrees F. Heat a large skillet over medium-high heat until hot. Add the beef and spread out in a single layer. Sprinkle with salt and pepper. Cook, stirring and breaking into small bits, until browned, about 3 minutes. Transfer to a dish with a slotted spoon.
  • Add the oil to the same skillet and reduce the heat to medium. Add the carrots, garlic, celery, onions and some salt and pepper. Cook, stirring occasionally, until the vegetables are browned and tender, about 10 minutes. Add the flour and tomato paste and cook, stirring, for 1 minute. Beef Shepherd's Pie image

Steps:

  • Preheat oven to 375 degrees F.
  • Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium heat. Add the onion, carrots, celery, mushrooms, garlic, half the salt, and oregano. Cook until vegetables are tender, about 10 minutes. Stir in the tomato paste and cook until mushrooms are soft and tomato paste has turned brick red, about 8 minutes more. Stir in the beef, the broth, the remaining salt, the Worcestershire, and some pepper, breaking up any large clumps of meat, cook until the meat is no longer pink, about 3 minutes.
  • Transfer the meat and vegetables to a 2-quart oval casserole dish and spread the mashed potatoes over the top, leaving a 1/4-inch boarder around the edge. Make a decorative pattern on the top of the potatoes, if desired. Sprinkle with cheese, if using, and dot with the remaining tablespoon of butter. Bake until potatoes brown and the juices bubble around the edge, about 40 minutes. Let cool for 10 minutes before serving.
  • Put the potatoes in a saucepan with cold water to cover by about 1-inch and add the salt.   • Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
  • Preheat the oven to 400 degrees F.
  • While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

  • Boil the potatoes until cooked through.
  • Save 1 cup of the potato water.
  • Drain potatoes and mash or rice them.
  • Add the butter and stir until the butter is melted.
  • Add enough water to make the potatoes smooth and fluffy.
  • In a frying pan, brown the beef; drain.
  • Return the meat to the pan and add both cans of corn, cooking over medium heat until cooked through.
  • Pour the beef mixture into a 1.5 qt casserole dish.
  • Smooth the mixture using a rubber spatula.
  • Spoon the potatoes over the beef mixture.
  • Smooth over with a rubber spatula.
  • Sprinkle salt and pepper over the top, to taste.
  • Bake in a 400 F oven until heated through, about 30 minutes, then turn on the broiler and remove the casserole just as the potatoes start to brown.

Worlds Best Shepherds Pie image

Steps:

  • Start by boiling 4-6 cups of water. Enough to accommodate the potatoes.
  • When water is boiling add the chopped potatoes. Boil for 10-12 mins while you are cooking the hamburger.
  • Put the hamburger into a pan and cook on medium high until it begins to brown.
  • Add the chopped onion and garlic.
  • Cook until the onions become soft and the hamburger is almost done. Maybe 8-10 mins?.
  • Add the creamed corn,regular corn, and the green beans.
  • Mix all together thoroughly.
  • Season the mixture with the garlic salt, onion salt, salt & pepper.
  • Cook for another 4-6 mins mixing often.
  • At this point strain the finished potatoes and put them back in the pot u cooked them inches Add the 3 tbsp butter and a little bit of the warm milk. Use an electric beater and start to whip them. Slowly adding the rest of the milk.
  • Put the hamburger mixture into a medium sized cooking pot 8-10 inch's in diameter, 3-4 inches deep. Spread it evenly in the pot.
  • Using a spatula scrape out the mashed potatoes and spread them evenly over the top of the meat mixture.
  • Sprinkle the top with the Montreal steak seasoning and paprika.
  • Bake at 350 for 25-30 mins or until the juices start bubbling out the sides.
  • Enjoy!

TRADITIONAL IRISH SHEPHERD'S PIE

Posting this per a request. I've said it once and I'll say it again there is nothing Irish about Corned Beef and Cabbage, but Shepherd's Pie has always been and still is a staple of traditional Irish cooking. This is a really easy, but tasty recipe that the whole family will enjoy. It's nutritionally sound with all the major food groups represented. The British use lamb in their Shepherd's Pie, but we've always used beef. Do whatever you prefer or even try turkey if you're watching fat content. This sauce is lovely and rich and should go well with any meat. You can use fresh or leftover mashed potato. I usually use 3 tbsp of ketchup instead of the 2tbsp of tomato paste as I like the hint of sweetness, but traditionally the paste would be more sound! You can also make individual pies which are always a hit with the kids. This freezes beautifully too, so make two and save one! Just let it defrost and glaze with the egg and pop into the oven as directed. Enjoy! :)

Traditional Irish Shepherd's Pie image

Steps:

  • Pre-heat oven to 200C/400°F.
  • Saute carrots in the olive oil until starting to get tender.
  • Add in the onions and saute for a minute or two then add the meat.
  • Season with black pepper and thyme.
  • Cook until browned then drain fat.
  • Add the butter and peas.
  • Sprinkle with flour and stir through.
  • Add tomato paste, wine and Worcestershire sauce.
  • Let this reduce slightly then add the chicken stock. Allow to reduce down until you have a thick meaty gravy. Season to your taste.
  • Remove from heat. Grease an oven proof dish** (9x13 works for me, as does an oval baker) with butter and add the sauce.
  • Spoon or pipe the mashed potatoes over top. Brush with egg and sprinkle with Parmesan cheese if using.
  • Bake for about 20 minutes or until the potato is nice and browned on top.
  • Serve as is or with some crusty bread to mop up that yummy sauce!

Steps:

  • Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes; drain, and return to pan.
