REUBEN WAFFLE FRIES AND EGGS

- Preheat the oven to 450 degrees F.
- For the Russian dressing: Mix the sour cream, ketchup, relish, horseradish, Worcestershire, salt and pepper in a small bowl.
- For the fries and eggs: Bake waffle fries on a parchment-lined-baking sheet to very crisp, 25 minutes. Season. Arrange fries in a cast-iron skillet.
- Heat sauerkraut in small pot with cumin, caraway and mustard seed.
- In a medium nonstick skillet, melt 2 tablespoons butter over medium heat. Add onions and cook to soften, 5 minutes. Add 1/2 cup water and raise heat. Let it absorb, reduce heat and add the pastrami; combine. Crisp meat at edges a couple of minutes then add brandy or sherry or stock.
- Cook eggs in nonstick skillet over medium heat in butter and cover pan to cook yolks to desired doneness.
- Top potatoes with meat, sauerkraut and cheese. Broil to brown cheese and bubble. Top with dressing and herbs. Arrange eggs on top and serve from skillet.
WAFFLE-IRON BROWNIES
These are brownies that can be baked in a pan conventionally, but they make a terrific option for waffle-iron cookies. I have a Scandinavian-style iron that makes heart-shaped waffles, which are attractive. Dust them with powdered sugar when you serve them. They're great hot, or they can be frozen.

- Preheat the oven to 325 degrees F. If you plan to bake the brownies, and butter a 9-inch square baking pan. Otherwise, preheat a waffle iron. In a small bowl, mix together the flour, baking soda and salt. In a small, heavy saucepan, combine the sugar, butter and milk. Place over medium-high heat and bring to a boil, stirring until the butter has melted. Remove from the heat. Add the unsweetened chocolate and vanilla. Stir until the chocolate melts and the mixture is smooth. Place into a pan of cold water to cool the mixture to room temperature.
- With an electric mixer, beat in the eggs. Gradually blend in the flour mixture until smooth.
- (Spread evenly into the prepared pan if you are baking the brownies. Bake for 25 to 30 minutes until the center is just set and feels firm when touched. Cool completely before attempting to cut, these are very rich and gooey! Dust with powdered sugar and cut into squares.)
- To make brownies in waffle iron: Drop rounded spoonfuls of the brownie mixture into the preheated waffle iron. Close the iron and cook for about 2 minutes until the brownies are done. Remove and cool on a rack. Dust with powdered sugar before serving, if desired.

- Prepare brownies according to mix directions, omitting any water or milk. Pour 1/2 cup of the mixture per square in the waffle maker. Bake for 10 minutes.
- Once baked, open waffle maker and turn off the heat. Let brownies sit until slightly cool, about 3 minutes.

Serve 1/2 a large waffle or 2 sections from your iron per person, topping with sliced berries and a rosette of whipped cream.

Stir the wet into dry until just moist. Do not overstir the waffle batter. Brush the iron with a little melted butter and cook 4 waffles, 4 sections each. Serve with toppings of choice.
