Steps:
- Cook the pasta al dente according to package directions, then drain in a colander.
- Meanwhile, toast the walnuts in a small dry skillet over medium-high heat until fragrant, stirring frequently, 3 to 5 minutes.
- In the pot the pasta was cooked in, heat the olive oil over low heat, add the garlic stirring until soft and fragrant, 3 to 4 minutes (be careful not to burn it). Return the pasta to the pot, add the broth, all but 2 tablespoons of the walnuts, the parsley, salt and pepper and toss to combine, cooking over low heat for 1 to 2 minutes. Add 1/2 cup Parmesan and toss to combine. Arrange 1/2 cup of arugula leaves on each of 4 serving plates. Top each with about 2 cups of pasta. Sprinkle with remaining cheese, the reserved walnuts and more parsley. Serve hot.

ROSEMARY-GARLIC POTATO BREAD
I learned the joys of putting potatoes in bread during my time in the Napa Valley, so the flavors here are resonant of that magical place, but don't be afraid to change up the herbs or play with nuts and olives. You can't mess it up. Well, you can - I certainly have more than once - but you know what I mean. You can do this by hand, but it's messy, so I wrote this recipe with directions for using a stand mixer. -Duff

- Peel and coarsely chop the potatoes. Squeeze the garlic from the garlic head into a medium bowl and add the potatoes.
- In the bowl of a stand mixer fitted with the dough hook, combine the yeast, 2 cups warm water, and the sugar and let the yeast bloom for about 7 minutes, or until bubbly. Add the olive oil, potatoes, garlic, salt, and flours. Mix on medium speed for 15 minutes.
- Turn the dough out into an oiled bowl, cover it with plastic wrap, and let it rise in a warm place for 1 1/2 hours, or until doubled in size.
- Punch it down and let it rise again for 1 hour. Punch it down again and cut the dough in half. Shape each loaf into a ball, place them on a baking sheet, and let them rise for 45 minutes, or until nice and poofy.
- Preheat the oven to 400 degrees F.
- Brush the loaves with olive oil and sprinkle them with a wee bit of salt and some rosemary. Cut a big slash across the top of each and bake for about 45 minutes, or until the loaves are a nice rich brown and sound hollow when tapped. Let cool on a wire rack. Never refrigerate!
- Bake potatoes (preferably russet potatoes - the big brown ubiquitous ones) in the oven. Rub the potatoes with a bit of olive oil, kosher salt, and pepper. Stick 'em with a fork like 20 times all over the place to let the steam out. Place them on a baking sheet and roast at 425 degrees F for 1 hour. The skin will get nice and crispy and you can scoop out the potato meat really easy, and also enjoy the skins as a snack while you bake. (As a poor culinary student, I always saved my potato skins as dinner. How did that bacon end up in my backpack? That's weird!
- You should know how to roast garlic - it may save your life one day. Heat the oven to 425 degrees F. Chop off the pointy end of the head of the garlic and expose the cloves. Drizzle olive oil right onto the exposed garlic, wrap it tightly with aluminum foil, place on a baking sheet, and roast for 35 to 40 minutes. Really, though, don't time it - just roast them until they smell amazing. You'll know it when you smell it. You'll also know very quickly if you over-roast it - it'll smell awful and burnt. Throw that crap away and start over.

- Preheat oven to 325 degrees F ( 165 degrees C ). Grease an 8x4 inch loaf pan.
- In a medium bowl, stir together the flour, baking powder, salt, nutmeg cinnamon, and sugar. Add the eggs, oil, and milk; mix until well blended. Finally, stir in the mashed sweet potatoes, pecans, and golden raisins. Pour the batter into the prepared pan.

- Preheat oven to 325 degrees.
- In a large mixing bowl, combine sugar, oil, egg, sweet potatoes and vanilla.

Steps:
- Mix 2 cups warm water and yeast in large bowl of electric mixer fitted with dough hook; let stand until yeast dissolves, about 5 minutes.
- In medium bowl, combine all purpose flour with whole wheat flour, rosemary and salt.
- Stir 1 tblsp oil into yeast mixture.
- Gradually add flour mixture and beat until incorporated.
- Mix on medium speed 10 minutes, adding more all purpose flour if dough is sticky.
- Turn out dough onto floured surface; knead until smooth and elastic, about 3 minutes.
- Place dough in lightly-oiled large bowl; turn to coat.
- Cover with plastic, then kitchen towel.
- Let dough rise in warm, draft-free area until doubled in volume, about 1 ¼ hours.
- Meanwhile, heat 1 tblsp oil and garlic in small skillet over medium heat for 1 minute; stir in nuts and pepper.
- Remove from heat; cool.
- Discard garlic.
- Preheat oven to 375F.
- Punch dough down; let rest 10 minutes.
- Roll out dough to 12 inch diameter round.
- Spread walnut mixture over.
- Fold dough over walnut mixture; knead 3 minutes to distribute walnuts evenly.
- Form dough into ball.
- Place smooth side up on heavy, large baking sheet.
- Cover with towel; let rise in warm, draft-free area until almost doubled, about 35 minutes.
- Bake until bread is golden and sounds hollow when tapped on bottom, about 45 minutes.
- Cool on rack.

- Mix all the ingredients (excepting walnuts) with a food processor for about 5 minutes.
- Let rise (covered) to double size in a warm place; in possible in a bowl in the oven with another cup with warm (not hot) water nearby.
- After this time flat your dough on a non sticky surface (or use some flour) and top with walnuts.
- Fold in three in the legs and flat the dough again. Let rest 5 minutes.
- Fold on the other side in the same way. Let rest 5 minutes.
- Repeat 2 more times.
- Divide the dough with a plastic knife in six parts and form 6 breads of 25-30 cm.
- Prepare two baking trays with 3 breads each.
- Let rise one hour to double size and take out of the oven (if you had them there).
- Heat the oven to 230°C (heat and timing are basing it on convection oven) with a fire resistant tin filled with hot water.
- With scissors cut the surface (1 cm depth) as you like.
- Let rise 20-30 minutes.
- Let your tin with boiling water in the oven and bake both trays for about 20 minutes (together or separately if you cannot).
- When golden-brown take out and let cool down completely.
- Usually we eat one piece and I freeze the other breads. Feel free to reduce the quantities.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch tube pan.
- Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
- Beat butter in a large bowl using an electric mixer until creamy, about 2 minutes. Gradually beat sugar into creamed butter until fully incorporated, about 3 more minutes. Add eggs, 1 at a time, beating each egg completely before add the next. Beat in sweet potato and vanilla extract until well mixed.
