GRILLED FRUIT KEBABS
Steps:
- Submerge skewers in water for 10 to 12 minutes. This will keep them from burning when grilled.
- Preheat a grill pan over medium heat.
- Thread fruit onto skewer, alternating types of fruit for a colorful presentation; fill the skewer no more than halfway. With a pastry brush, paint the fruit with a light coating of oil. Place skewers, a few at a time, in the hot grill pan. Turn occasionally until you have grill marks on all sides of the fruit. Serve with ice cream, if desired.
GRILLED FRUIT KEBABS
Steps:
- Preheat grill to medium. Thread plums and pineapple chunks onto bamboo skewers that have been soaked in water for at least 30 minutes. Place on lightly oiled grill and cook for approximately 3 minutes on each side, until fruit softens and take on grill marks. Serve drizzled with honey, if desired.

- Heat the coconut cream and heavy cream in a small saucepan over medium heat until simmering. Remove from heat and stir in chocolate until melted and smooth. Stir in the lime zest. Set aside. (The vanilla butter and chocolate sauce can be made up to 3 days ahead, refrigerated, and reheated before grilling.)
- If using wooden skewers, soak them in water for 30 minutes before grilling. Prepare an outdoor grill with a low-medium fire.
- Prepare the fruit for the skewers, cutting the fruit into 2-inch chunks. Thread the fruit onto 8 (8-inch) skewers, alternating the mango and papaya. Brush lightly with some of the vanilla butter. Grill the fruit until lightly charred but not mushy, turning as needed, about 5 minutes per side. Pool about 2 tablespoons chocolate sauce on each of 4 plates, arrange 2 skewers on each plate, and drizzle with a bit of vanilla butter.

SUMMER FRUIT KEBABS WITH HONEY AND COCONUT
Talk about a healthy, sweet summer treat?! After all the chocolate and brownies as the past few desserts, I thought it might be time for some "dessert of the month detox"! ;) And what better way than with fresh fruit, honey and unsweetened coconut! Or sweetened coconut flakes if you insist on having sugar in your dessert. Or if that's what you've got on hand! Oh...and what you don't end up using for dessert on the skewers can be turned into a lovely fruit salad.
