TILAPIA FISH TACOS WITH ARUGULA

Tilapia Fish Tacos with Arugula image

Steps:

  • *Can be found in Asian markets
  • Special equipment: a 12-count nonstick muffin pan
  • For the wonton cups: Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
  • Using a pastry brush, brush each side of the wonton wrappers with canola oil. Gently press the wonton wrappers into the bottom and sides of a 12-count muffin pan. Bake until lightly golden, about 6 minutes. Remove the pan from the oven and let cool for 5 minutes. Gently lift the wonton cups out of the pan and cool completely, about 10 minutes.
  • For the filling: In a large, nonstick skillet, heat 3 tablespoons olive oil over medium-high heat. Drizzle the tilapia fillets with olive oil and season with salt and pepper, to taste. Arrange the fish in a single layer in the pan and cook until the flesh is flaky and cooked through, about 2 to 3 minutes on each side. Set aside to cool slightly.
  • For the dressing: In a medium bowl, whisk together the 3 tablespoons of olive oil and the lime juice. Season with salt, to taste. Add the avocado, mango, green onions, and arugula. Toss until all the ingredients are coated.
  • For the creme fraiche: In a small bowl, mix together the creme fraiche, wasabi powder and salt until smooth.
  • To assemble the tacos: Put the wonton cups on a platter and divide the avocado mixture into the cups. Top each with 3 to 4 pieces of fish. Spoon about 1 to 2 teaspoons of the creme fraiche mixture on top of the fish and serve.
  • Cook's Note: The wonton wrappers can burn very quickly in the oven so check them after 5 minutes.

12 (3 1/4 by 3 1/4-inch square) wonton wrappers*
1/4 cup canola or vegetable oil
3 tablespoons olive oil, plus more for drizzling
3 tilapia fillets (about 8 ounces total), cut into 3/4-inch pieces
Kosher salt and freshly ground black pepper
1 avocado, halved, pitted and flesh cut into 1/2-inch cubes
1 mango, peeled and flesh cut into 1/2-inch cubes
3 green onions, finely chopped
3 cups coarsely chopped baby arugula
3 tablespoons olive oil
2 tablespoons fresh lime juice (from about 2 limes)
Kosher salt
1/2 cup creme fraiche
1 tablespoon wasabi powder*
1/4 teaspoon kosher salt

WASABI TILAPIA

My husband swears that this is the closest he has eaten to the "real" Japanese food he had in Japan. I can't vouch for that, but I do crave this about once a week. I normally pair with mixed steamed veggies and leftover brown rice.

Steps:

  • Thaw the fillets. Make sure you have an oven rack placed very close to the broiler and turn on the broiler, the objective is fast and hot cooking.
  • Place the fillets in a small shallow baking dish and smear each filet with the mayonnaise. Pour the wine into the bottom of the baking dish (not over the fillets). Place the fish under the broiler and cook for 5-7 minutes. You will know it is done when the mayonnaise begins to brown and bubble on the top.
  • Remove the fish and "baste" it with the wine sauce (wine mixed with fish juice and mayonnaise drippings). Allow the fish to rest for 2 minutes.
  • Move to plates and re-baste as needed.

Crunchy Wasabi-Crusted Fish with Red-Cabbage Slaw image

Steps:

  • Prepare fish:
  • Put oven rack in upper third of oven and preheat oven to 400°F. Line a shallow baking pan with foil.
  • Pat fillets dry, then arrange in baking pan. Sprinkle salt all over fillets. Stir together wasabi paste and mayonnaise in a bowl, then spread tops of fillets with half of mayonnaise and sprinkle with half of panko. Turn fillets over and spread with remaining mayonnaise, then sprinkle with remaining crumbs.
  • Bake until fish is just cooked through, 12 to 16 minutes, then broil 4 to 6 inches from heat until crumbs on top are golden brown, 1 to 2 minutes.
  • Make slaw while fish bakes:
  • Stir together vinegar, sugar, mustard, and salt in a bowl until sugar is dissolved. Halve cucumber lengthwise, then thinly slice. Add to dressing along with cabbage and stir to coat. Serve slaw alongside fish.

4 (3/4- to 1-inch-thick) skinless white-fleshed fish fillets, such as Pacific cod or halibut (6 oz each)
1/2 teaspoon salt
1 1/2 teaspoons wasabi paste (from a tube)
1/2 cup mayonnaise
1 to 1 1/4 cups panko (Japanese bread crumbs)
For slaw
1/4 cup distilled white vinegar
1 teaspoon sugar
1/2 teaspoon dry mustard
3/4 teaspoon salt
1 seedless cucumber (usually plastic-wrapped)
8 oz shredded red cabbage (4 cups; from a 10-oz package)
Accompaniment: pickled ginger (sushi ginger)
