EGG MAYO & WATERCRESS ROLLS

Steps:
- Hard-boil eggs for 10 mins, then drain and cool under cold water for 5 mins. Peel, roughly chop and put in a bowl.
- Roughly chop watercress, and stir this into the eggs with some salt and pepper and mayonnaise. Divide the filling between the rolls.

SMOKED SALMON AND WATERCRESS MAYONNAISE FINGER SANDWICHES
Steps:
- Add the watercress and lemon juice to the blender. Blend until smooth. Place the watercress in cheesecloth and squeeze out excess water. Set aside. Add the egg yolk and mustard to the blender and blend for 15 seconds. Slowly drizzle in the oil until the mixture has the consistency of mayonnaise. Season with salt and pepper. Fold the pureed watercress into the mayonnaise. Reseason with hot pepper sauce and lemon juice.
- Spread watercress mayonnaise on 18 slices of pumpernickel bread. Top with 2 ounces of smoked salmon. Top with 1 slice of black radish. Place another slice of bread on top.

- In a blender, combine the watercress, sour cream, lemon juice, tabasco, salt, and pepper. Puree until smooth, then transfer to a bowl and stir in the mayonnaise.
ROAST BEEF SANDWICH WITH WATERCRESS AND HORSERADISH MAYONNAISE

- If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes.
- Combine thickened or Greek-style yogurt, mayonnaise, horseradish and salt and pepper in a small bowl and stir to incorporate.
- Place 1/4 cup watercress each on 4 slices of bread and drizzle with 2 tablespoons horseradish mayonnaise. Layer with 3 ounces roast beef per sandwich, tomato slices and onion slices. Top with another slice of bread and wrap in waxed paper, then aluminum foil.

- For the Scotch eggs, tip the potatoes into a large pan and cover with water. Bring to the boil, then tip in the haddock and then the quail's eggs. Cook the eggs for exactly 2 mins, then remove them and cool under cold running water. Continue cooking the haddock until it flakes, and the potatoes until soft. Drain the fish and potatoes well, then mash with the butter and milk until you have a thick mash. Set aside to cool.
- Meanwhile, peel the eggs. When everything is cool, pat out spoonfuls of mash mix and mould them around the eggs so that they are completely encased. Roll the covered eggs in the flour, then the beaten egg and finally the breadcrumbs. Chill for 1 hr to firm up, or overnight if you're assembling ahead.
- For the watercress mayonnaise, blitz the watercress with the lemon juice until finely chopped, then stir through the mayonnaise. Blanch the asparagus for 4 mins, then drain under cold water. This can all be done a day in advance.
- To serve, heat a good layer of sunflower oil in a frying pan. Fry the eggs until crisp on all sides, then drain on kitchen paper. Serve with the asparagus and watercress mayonnaise for dipping everything into.

Steps:
- Spread mayonnaise on the top of each slice of bread.
- Cut off and discard the tough stems from the watercress. Coarsely chop the remaining watercress leaves and stems.
- Top 4 of the mayonnaise-smeared slices of bread with the chopped watercress. Sprinkle with salt and pepper and cover with remaining slices.
- Cut away the crusts of each sandwich. Cut each sandwich diagonally in half to make triangles.

- Put the egg yolks, mustard (if using), white wine vinegar and salt into a food processor and blend very briefly to mix.
- Mix the olive oil and sunflower oil together. Turn on the machine again and very slowly trickle the oil through the funnel until you have a thick emulsion. Stop the machine, add the trimmed watercress, and blend once more until well mixed in.
- Spoon the mixture into a bowl, and if it is very thick, mix in a little warm water to loosen it a little. Cover, chill and use within 24 hours.
