15-MINUTE MEATLOAF MELTS

Satisfy your meat loaf craving in just 15 minutes by making thin patties and broiling them. These quick and comforting sandwiches have all the elements of a blue plate special-meat loaf, potatoes (in the form of a potato bun) and green beans. They're terrific just the way they are, but adding a couple strips of leftover bacon to each sandwich would be great too!

15-Minute Meatloaf Melts image

Steps:

  • Preheat the broiler.
  • Grate the shallot over a large bowl. Add the meat loaf mix, breadcrumbs, half the ketchup, egg, Worcestershire sauce, 1 teaspoon salt and several grinds of pepper. Use your hands to thoroughly combine the mixture, then divide it into 4 equal balls and shape each into a patty a little less than 1/2 inch thick. Arrange on a baking sheet and broil until the tops of the patties begin to firm up and brown, 3 to 4 minutes. Flip the patties with a metal spatula and continue to broil until cooked through, 2 to 3 minutes more.
  • Brush each patty with some of the remaining ketchup and top each with a slice of cheese. Continue to broil until the cheese melts, about 30 seconds more.
  • While the patties broil, put the green beans, butter, 1 tablespoon water, 1/2 teaspoon salt and a few grinds of pepper in a medium microwave-safe bowl. Cover and microwave until hot, 4 to 5 minutes.
  • Open the buns and spread the cut sides with mayonnaise. Place a lettuce leaf and patty in each. Serve each sandwich with a small bowl of green beans.

Steps:

  • Heat oven to 350 degrees. Place a skillet over medium heat, and melt butter. Add onion and salt to taste, and sauté until golden brown. Remove from heat, and set aside.
  • In a mixing bowl, combine beef, pork, Worcestershire sauce, soy sauce, mustard, cracker crumbs and 1/4 cup applesauce. Add onion, and mix well. Gently press into a loaf pan 9 inches by 5 inches by 3 inches, and smooth top. Spread top with remaining 3 tablespoons applesauce, and lay bacon slices lengthwise over top. Sprinkle generously with black pepper.
  • Bake until well browned on top and no longer pink in center, about 1 hour. Remove from oven, and carefully pour out juices that have accumulated in pan. Allow to sit for 5 to 10 minutes before removing from pan and slicing.

Steps:

  • Place a rack in the center of the oven, and heat to 350 degrees.
  • Put onion, carrot, garlic and celery in the bowl of a food processor, and pulse until the vegetables are chopped medium fine; there should be about 1 2/3 cups of chopped vegetables.
  • Combine all of the ingredients, reserving 4 tablespoons of the ketchup.
  • Add optional ingredients, if desired. Divide the mixture into 4 equal parts. Form into mounded ovals that do not touch in a 9-by-13-inch heatproof glass baking dish. Bake for 30 minutes. Spread 1 tablespoon of ketchup over the top of each loaf, and bake for 10 minutes. Remove from oven, and let rest for 5 minutes. Using a pancake turner, remove each loaf and serve on individual plates.

Millionaire's Meatloaf image

Steps:

  • For the meatloaf: Preheat oven to 375 degrees. Place a large skillet over medium heat, and add the olive oil, onions and garlic. Sauté until translucent and tender, 3 to 4 minutes. Remove from heat and set aside to cool.
  • In a large mixing bowl, combine ground beef, eggs and milk. Mix well by hand, and add bread crumbs, mustard, barbecue sauce, horseradish, and cooked onions and garlic. Mix again, and add the parsley, salt, pepper and thyme. Mix well until thoroughly combined.
  • Spread the croutons across a shallow 8-inch-square baking dish. Top with the meatloaf mix, patting the surface so it is level. Bake until the internal temperature reads 165 degrees on an instant-read thermometer and the top is nicely browned, about 1 hour. Toward the end of baking, prepare the chili shrimp.
  • For the chili shrimp: In a small mixing bowl, combine the chili powder, cayenne pepper, paprika and flour. Dredge the shrimp in the mixture until well coated. Place a small skillet over medium heat, and add the chili oil. When it is hot, add the shrimp and cook for 2 minutes a side.
  • To finish, cut the meatloaf into 4 slices. Place a slice on each of 4 plates, and top with a chili shrimp. If desired, serve with mashed potatoes.

  • Spread mayonnaise on the top of each slice of bread.
  • Cut off and discard the tough stems from the watercress. Coarsely chop the remaining watercress leaves and stems.
  • Top 4 of the mayonnaise-smeared slices of bread with the chopped watercress. Sprinkle with salt and pepper and cover with remaining slices.
  • Cut away the crusts of each sandwich. Cut each sandwich diagonally in half to make triangles.

Chipotle-Glazed Meatloaf with Sweet Potatoes image

Steps:

  • Preheat oven to 375 degrees. Combine meat, bread, onion, cilantro, egg, Worcestershire, adobo sauce, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a bowl. Transfer mixture to a 5-by-9-inch nonstick loaf pan. Stir together chiles and ketchup; brush onto top of loaf.
  • Prick potatoes with a fork. Set loaf pan on a rimmed baking sheet; surround with potatoes. Bake until a thermometer inserted in center of loaf reads 160 degrees, 1 hour, 15 minutes. Peel potatoes; add oil, season with salt and pepper, and mash. Reserve half of loaf for next day; serve remainder with potatoes, watercress, and limes.

Steps:

  • Place the watercress in a 10-inch pie plate or quiche dish. Cook, uncovered, at 100 percent power for 5 minutes 30 seconds in a microwave oven. Remove from the oven and let stand until cool.
  • Place the watercress in a food processor and coarsely chop. Remove to a large mixing bowl. Place the onion and garlic in the food processor and finely chop. Add to the watercress in the mixing bowl, along with the remaining ingredients, and blend well.
  • Transfer the mixture to a glass loaf pan measuring 9 by 5 by 3 inches, making sure there are no air pockets. Cover tightly with microwave plastic wrap and cook at 100 percent power for 14 minutes. Prick the plastic to release steam.
  • Remove from the oven and uncover. Cover with a kitchen towel and let stand for 10 minutes. Serve hot or cold.
