Steps:
- Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
- In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
- The next day, preheat the oven to 350 degrees F.
- Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.
SAUSAGE BRUNCH CASSEROLE
This casserole is great for when you have guests or for the holidays, because you make it the day ahead and cook it the next morning. It makes for a stress free morning for the cook with her guests! The choice of cheese depends on your tolerance for heat. Prep time does not include the time spent in the refrigerator overnight.

Steps:
- Brown the sausage in a skillet, breaking it up into crumbles. At the end of the cooking cycle, add the green onions and cook until tender. Drain the grease from the sausage and green onions.
- Tear the bread into bite-size pieces.
- Combine the sausage/onion mixture, bread, eggs, milk, dry mustard, salt, black pepper, garlic powder, and cheese in a bowl; mix well.
- Pour into a 2 1/2 quart nonstick casserole. Chill, covered for 8 to 10 hours.
- Bring casserole out of the refrigerator and allow it to sit while the oven is preheating to 325 degrees.
- Bake at 325 for 50 minutes.

WEEKEND BRUNCH CASSEROLE
I made this for my family's Sunday Big Breakfast. When I made it I used a off brand of pork sausage. I also did not use all 2 cups of mozzarella. My family really liked this casserole. It was very easy to make. Mine took a extra 5 minutes to bake as the eggs weren't set all the way. I got it from Tops courtesy of Bob Evans Farms.

- Preheat oven to 425. Crumble and cook sausage in medium skillet over medium heat until browned. Drain.

- Cook the sausage in a large nonstick skillet over medium-high heat until browned and cooked through, 6 to 8 minutes. Using a slotted spoon, transfer the sausage to a bowl to cool slightly and discard any fat left behind in the skillet.
- Coat the insert of a 6-quart slow cooker with cooking spray. Layer half of the hash brown potatoes with half the sausage. Toss the bell peppers with the Cheddar, red onion and 1 cup of the mozzarella. Layer half the mixture over the sausage, then repeat the layering with the remaining potatoes, sausage and vegetable-cheese mixture.
- Whisk the eggs, milk, paprika, 1/2 teaspoon salt and 1/4 teaspoon black pepper in a large bowl, then pour over the casserole mixture. Sprinkle the top with the remaining 1 cup mozzarella, then cover and cook on low until the eggs are set and have become a custard, about 7 hours. Turn off the heat, uncover and let rest for about 10 minutes.
- Sprinkle with sliced scallions and serve with hot sauce and ketchup.

- Preheat oven to 425°F. Toast bread on a rimmed baking sheet until dry, 8-10 minutes.
- Meanwhile, heat a large skillet over medium-high. Add sausage and cook, breaking into pieces with a spatula, until browned, about 7 minutes.
- Butter a 3-quart baking dish. Arrange 6 bread slices in dish in one layer, covering bottom of pan completely and cutting slices to fit if needed. Tear remaining slice into smaller pieces to fill in any gaps.
- Using a slotted spoon, transfer sausage to baking dish, scattering over bread.
- Heat skillet over medium and add white and pale green scallion parts. Cook, stirring, until softened and just starting to take on color, about 3 minutes.
