These are on the small side and a little lumpy so may not be guest-worthy but they are super chocolaty and yummy! Feel free to substitute in your own bran-type cereal. I modified this recipe from Fibre 1 cereal to Corn bran because that's what I had in the house!

Super Chocolate Weight Watchers 2 Point Muffins image

Steps:

  • Combine cereal and water and allow to sit and soften while you get the dry ingredients together.
  • Add vanilla and egg white to softened cereal.
  • Stir the wet ingredients into the dry ingredients. It will look dry, but keep stirring and it will eventually soak up all the dry ingredients.
  • Bake at 375 for 15-18 minutes or until fully cooked (use a toothpick to double check since the outside always looks done on these.

Steps:

  • Mix all ingredients in a mixing bowl. With a hand mixer beat about 2 -3 minutes until mixed well. Spoon batter into lined muffin pan. I got 16 muffins. Bake about 20-25 minutes depending on your oven. Do not over bake. They will be very moist. Notes: Adjust points according to how many many muffins you get 24 muffins will be 2 points each 16 will be 3 points These can be frozen in a Ziplock. Remove however many you want the night before (or earlier in the day) to thaw.

Steps:

  • Preheat Oven 350 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix all dry ingredients to equally distribute.
  • Add applesauce.
  • Don't let rest, put into muffin tin 3/4 full.
  • Bake 20-22 minutes.

1/2 cup whole wheat flour (I used whole wheat pastry flour)
3/4 cup all-purpose flour
1 cup Splenda sugar substitute
1 teaspoon sea salt (regular salt is also fine)
1 1/2 teaspoons baking soda
1 teaspoon pumpkin pie spice
